Looking for something fun to do with the kids today? Why not make some of these super tasty shortbread biscuits and then the kids, and yourselves, can enjoy decorating them!
I loved decorating biscuits when I was younger, I still enjoy it now but I'd like to think I'm a little better at it now.
Decorating easter biscuits are so fun for everyone, especially if you have some sprinkles!
The biscuits only take about 10-15 minutes to whip up, then you put them in the fridge for 30 minutes and then bake for 10-15 minutes. So you could make them before lunch and then start decorating after!
This is how I sat to decorate my biscuits yesterday. I wanted to be in the garden with Joss and Maxine but I also needed to get the biscuits done.
This way I could enjoy both at the same time!
Why not get a picnic blanket out in the garden and all sit on that and enjoy decorating your biscuits.
That makes it even more fun and exciting, being able to do baking outside!
The great thing about these biscuits is they can be whatever you want! You can decorate them all in sprinkles, do some writing on them, paint some pictures on them.
If you don't have any easter cookie cutters, cut some shapes out of paper and then trace round them with a knife.
If you have some paintbrushes you can let the kids use those to decorate with. The icing will act as paint, or you can use plain food colouring.
I do this when I paint on cakes, it's a lot of fun and everyone will enjoy it!
It's great for the younger kids who can't use a piping bag!
I used raspberry ripple flavoured icing sugar for the icing I decorated with. I had this in the house so I could use it, you can use normal icing sugar! You can add some flavouring into it, if you have any, if you want to flavour it, but it will taste good even if you don't!

Easter Biscuits - Makes 25
Ingredients;
Shortbread;
250g Butter - I use Flora as it's the best butter I've found so far, the rest melt almost instantly.
125g Icing Sugar
125g Cornflour
250g Plain Flour
3-4 tsp Vanilla Essence
Icing;
250g Raspberry Ripple Icing Sugar - Sugar and Crumbs
1-2 Cups Water
Other (All optional); You can use any colours that you like, it's up to you. I also used sprinkles and I used edible pens to draw on some of the eggs.
You can decorate however you would like to.
Yellow, pink, black food colouring
Sprinkles
Edible pen
Method
Shortbread;
Preheat the oven 180C
Place the butter and vanilla into a large bowl.
Sift the icing sugar into the bowl and mix together until smooth.
Sift the flour and cornflour in. Mix to create a dough.
Place in the fridge for 30 minutes. - This lets the dough harden a little bit. Vegan butter is very soft, this makes the dough very soft and hard to roll out.
Roll the dough out to roughly ½ cm thick and cut your shapes out.
Prick each biscuit with a fork 2-3 times. - We do this to let the steam, that comes off the butter, a place to escape.
Bake for 10-15 minutes.
Let cool completely before decorating.
Icing;
Sift the icing sugar into a bowl.
Slowly add the water in and mix till it is a thick consistency. Remember when you add the food colouring it will become a runnier mix.
You want it to be quite thick so it doesn't just run off the biscuits.
Split the mix into separate bowls, the amount depends on which colours you intend to use most.
Colour your icing and transfer into piping bags. I find that using disposable bags and cutting a tiny hole in the end works much better than using piping nozzles.
Decorate your biscuits however you would like to.
