Who doesn't love to start their day with a piece of flapjack? Or two - I wont tell!
This Vegan Flapjack is super healthy because it has no added sugar! Even better it is gluten free too!
For those of you that don't need to be gluten free you can use your normal flour and oats. Also I use honey in this, which I highly recommend, but you can use golden syrup instead if you prefer.

Ingredients
4 Cups Gluten Free Porridge Oats
2/3 Cups Gluten Free Plain Flour
1 Cup Mixed Nuts
2 Cups Mixed Dried Fruit
½ Cup Mixed Seeds
¾ Cup + 2 tbsp Butter - I use Pure but you can use any butter that you'd like.
¾ Cup Organic Honey
1 Cup + 2 tbsp Brown Sugar
Method
* Preheat the oven to 160C
* Line a tin with baking parchment roughly 9”
* In a large bowl sift the flour.
* Add the oats, nuts, fruit and seeds.
* In a small pan, on a low heat, melt the butter, syrup and sugar. Stir occasionally until melted and smooth. You want to stir it so that it doesn't burn! So keep a close eye on it.
* Add the wet ingredients into the dry. Mix until there are no dry patches. It should be quite sticky, so you should be able to start seeing parts stick together.
* Transfer the mix into your dish.
* Bake for 25-30 minutes or until browned.
* Cool for 10 minutes.
