Vegan French Toast

Breakfast is the most important meal of the day, it's almost the most skipped; especially in our house. We are trying desperately to get inspired and start eating breakfast every day. This vegan french toast is mouthwatering to look at! How could you resist trying this! Of course we had to give it a go!


Non vegan french toast is made using egg and because I have never tried it before I didn't know what flavour and texture I was aiming for.


I am sure that you can use an egg replacer to soak your toast to fry in but because I didn't have any I used oat milk, chia seeds, caster sugar and vanilla.


When you let the mix sit, the chia seeds will activate, this thickens the mixture. You can also use flax seeds but I like chia seeds.


Chia seeds;

Chia seeds are considered a superfood, this is because;

It has a high amount of nutrients and a low amount of calories

It's loaded with anti oxidants

Almost all the carbs in chia seeds are fiber

It's high in protein

Chia seeds may help with weight loss, blood sugar and chronic inflammation.

This is what your mix will look like if you use chia seeds. If you use ground flaxseeds you wont be able to see the seeds as much.

I quite like seeing the seeds on my food.


Once you have made your mix you need to heat a little oil in a frying pan.


Soak your bread in the mix for 3-5 seconds, just long enough to soften it a little.


Fry the bread for 4-5 minutes each side. You want them to be one layer on the pan, no over lapping else they wont cook properly.


The bread will go golden brown.


You want to use bread that is a couple of days old and started to go hard. Ciabatta and harder breads that like are better, however if you do use a sort bread like a bap or loaf bread don't soak the bread for 3-5 seconds. Just dip the bread on each side and place it in the pan.


If you soak the bread it will fall apart.

French Toast - Serves 2


Ingredients

2 Cups Milk

¼ Cup Chia Seeds

1 tbsp Caster Sugar

1 tsp Vanilla

8 Slices Ciabatta - Or bread of choice. Please see above for how to use softer breads.

1-2 tbsp Oil - I used vegetable oil but it is for frying so you can choose your preferred oil.


Method


In a small bowl pour the milk, chia seeds, sugar and vanilla. Whisk until smooth.


Let the mix sit for 10 minutes so the chia seeds can thicken the mix.


Heat a little oil in a frying pan, up to 1 tbsp depending on the size of your pan.


Soak the bread in the batter for about 2-5 seconds each slice. You want the bread to be covered and softened a little but not alot.


Fry the bread for 4-5 minutes each side, until golden brown.


Serve
