
Do you love french toast? And do you love bread pudding? If your answer is yes and yes you will love this Vegan French Toast Bake. It is the perfect combination of both delicious dishes!
The cinnamon adds a delicious spice to this dish, mixed with the sweet fresh berries to create the perfect flavour combination.

This dish will serve a whole family, 6, and fill you kids up all morning.
I used blueberries and raspberries for mine, but you can use any fruit you would like.
Mixed Berries;
Berries are among the healthiest food you can eat.
They are nutritious; they are loaded with antioxidants, fiber, vitamins and minerals.
Berries could help improve your blood sugar, can help fight inflammation, may help lower cholesterol and may be good for your skin.

French Toast Bake - Serves 6
Ingredients
1 Loaf of Vegan Wholemeal Bread
3 tbsp Maple Syrup You could also use golden syrup.
½ Cup Warm Water
2 Cups Vegan Milk I use Oat milk but any plant based milk will work.
1 tbsp Flaxseed + 3 tbsp water
1 tsp Vanilla
3 tsp Cinnamon
½ Cup Mixed Berries Or any berries that you would like to use
Method
Cut the bread into squares and lay in an oven tray. Quarter the bread.
Mix the flaxseed and water together and set aside. This makes a flaxegg
In a separate bowl mix the syrup with the warm water.
Stir in the milk, flax egg, vanilla and cinnamon.
Pour the wet mix over the bread.
Leave for 20 minutes for the bread to soak up the milk mix.
Sprinkle the mixed berries over the bread.
Preheat the oven to 180c.
Bake for 55-60 minutes. If it starts to get too dark before fully cooked, cover with foil.
Let cool before serving.
Serve
