Vegan Greek Salad

It's another beautiful day today; what's better on a sunny day than a delicious salad! This vegan Greek salad is super easy to make and tastes amazing!


It's perfect for anyone who loves greek food!


As you may have seen, I recently made some feta cheese, I made this salad to go with that feta cheese as I think of Greek food whenever I think of feta.


This salad only takes a few minutes to make, if you have the feta prepared.


You can easily prepare it in the morning to enjoy later in the day; it's a great recipe to take on a picnic.


To make this salad;


You just need to dice all your tomato, cucumber, pepper, onion and feta cheese and place them in a large bowl.


Add the olive oil, balsamic vinegar, olives, oregano, salt and pepper to the bowl.


Mix to combine all your ingredients


Serve and Enjoy!


Just like in a traditional Greek salad, I have added olives to this. You can use any olives that you like in your salad.


Olives;

Olives are high in vitamin E, minerals and antioxidants

Studies shows they are good for the heart and may help protect against osteoprosis and cancer

Greek Salad - Serve 2


Ingredients


2 Tomatoes

½ Large Cucumber

½ Green Pepper

¼ tbsp Oregano

2 tbsp Olive Oil

1 Cup Feta - Check out our recipe for feta cheese here

½ Red Onion

Handful Pitted Olives - You can use any olives you would like to.

Salt & Pepper To Taste

1-2 tbsp Balsamic Vinegar


Method


Dice the tomatoes, cucumber, pepper, feta and onion and place them in a large bowl.


Add the olives, vinegar, oregano, olive oil and salt and pepper.


Mix to combine all the ingredients


Serve


Enjoy!
