Vegan Indian Crumpets

Vegan Indian crumpets are sort of like pancakes but made with rice. They have a similar texture and they taste great!


Such a simple thing to make is great for a quick lunch or even snack!


Ingredients


1 ½ cups of Basmati Rice

10 cups of Water

1 ½ cups of Self Raising Flour

1 cup of Broccoli tips

2 Red Onions (finely diced)

1 tbsp Olive oil

Salt and Pepper


Method

* Put the rice and 6 cups of the water into a saucepan and boil for 10 minutes.

* Once the rice has boiled, drain whatever water remains in the pan, and place the rice in a large mixing bowl.

* Sift the flour into the rice, add the remaining water and season with salt and pepper to taste.

* Once all the ingredients are mixed together, blend everything using a hand blender. Blend until smooth.


* Add the broccoli and red onion.

* Heat the olive oil up in a frying pan on medium-high heat, then add approximately ⅓ cup of mixture to the pan and fry for about 3-4 minutes each side. You don't want to put more that 1/3 cup of the mixture in because it will be too heavy and you wont be able to flip them. My husband and I found this out the hard way.
