Vegan Jam Donut Babka

This Vegan Jam Donut Babka is delicious and perfect for summer! It really tastes like a jam donut! It's the perfect recipe if you have the time to make something super tasty and impressive! It's something the whole family will enjoy!


This recipe takes between 3 and 4 hours to make but it is well worth the wait.

We couldn’t wait for it to completely cool so we had a slice while it was still warm, and it was delicious! We then tried some more the next day when it had completely cooled and it tastes much more like a donut when cooled, and it was just as delicious as when it’s warm.


For this recipe Katie used raspberry jam to fill her Babka as that is her favourite, however, you can use any flavour of jam that you prefer, or even make your own jam. We have the perfect Blackberry Jam recipe that can be used to make your own jam.


This recipe makes about 8-10 portions, so is perfect for the whole family to enjoy.


Although this recipe is time consuming, I'm sure the kids would love to have a go at helping you! Bread is a great thing to get young bakers involved in! You can encourage them to knead the dough, spread the jam and if they are old enough cut the dough and help twirl it!

And they will be over the moon with the results!


There is nothing better than eating something amazing that you made yourself from scratch!

Jam Donut Babka - Makes 8-10 Portions


Ingredients:

2 ½ Cups Plain Flour

½ Cup Vegan Milk of choice - We use Oat milk but any plant based milk will work.

½ Cup Vegan Butter - We use Flora but any plant based butter will work

3 Tbsp Caster Sugar + ½ Cup sugar for glaze.

1 pack Instant Dried Yeast - This is the equivalent to 2.5 tsp

½ tsp Ground Cinnamon

2-3 tbsp Raspberry Jam - You could use any flavoured Jam you would like, I'm sure strawberry and blueberry jam would taste amazing!


Method:


Combine 1 tbsp sugar with the warm milk and dried yeast.


Leave for 10-15 minutes. This gives the yeast time to activate, you will see bubbles that let you know that it will work. If you don't see bubbles start again.


Mix all ingredients in a large bowl.


Knead the dough or 5-10 mins.


Cover dough and leave in a warm place for 1 hour.


Roll out the dough into a rectangle.


Spread jam on top.


Roll dough lengthways into a log shape. You need to roll it up like a swiss roll, using the long side.


Use a knife to cut the roll lengthways into 2 long strips.


Twirl the two strips and carefully put it into a loaf tin.


Cover and set aside to rise for 1 hour.


Preheat the oven to 170c.


Bake the Babka for 30-40 mins or until the outside is golden brown.


For the sugar glaze, dissolve ½ Cup sugar with 2tbsp of water in a pan on medium heat.


Drizzle sugar glaze over Babka while it is still hot.


Serve
