Vegan Jambalaya

Jambalaya is a popular dish of West African, French, Spanish & Native American Influence. I've replaced the meat with chickpeas and kidney beans to make this ridiculously tasty vegan jambalaya.


This recipe is super easy to make and so impressive! Everyone who eats this will love it!


This recipes serves 6 so it's perfect for the whole family!


Jambalaya is rice, vegetable and beans which makes this the perfect comfort food and the perfect winter meal!


I paired this with some ciabatta. This went perfectly! Check out our bread page to see what you can pair yours with.

To make this jambalaya;


Heat your oil in a pan and then saute the onions until they are fragrant.


Add your red & green peppers, garlic and carrots. Fry for 5 minutes.


Add your chopped tomatoes and boil for 5 minutes.


Add the soy sauce, spices, rice and vegetable stock. Find our soy free soy sauce recipe here.


Bring your mix to a boil and cook on a medium heat for 10 minutes or until the rice is almost cooked.


Add your chickpeas and kidney beans and cook for 1-2 minutes or until the rice is cooked.


Serve & Enjoy!

Jambalaya - Serves 6


Ingredients


1-2 tbsp Olive Oi

1 Onion - Diced

2 Cloves Garlic - Minced

1 Red Pepper - Diced

1 Green Pepper - Diced

1 Carrot - Peeled & Diced

1 Tin Chopped Tomatoes

2 tbsp Soy Sauce - Find our soy free soy sauce recipe here.

2 tsp Dried Oregano

1 tsp Dried Thyme

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Smoked Paprika

¼ tsp Ground Pepper

1 Cup Uncooked Rice

3 Cups Vegetable Stock

1 Cup Chickpeas -- Drained & Rinsed

1 Cup Kidney Beans - Drained & Rinsed


Method


Heat your oil in a large saucepan, on a med -high heat


When the oil is hot add the onions and saute until fragrant.


Add the garlic, red & green peppers and carrots and fry for 5 minutes.


Pour the chopped tomatoes into the pan and leave for 5 minutes on a medium heat


Add the soy sauce, spices, rice and vegetable stock.


Bring to a boil and cook on medium heat for 10 minutes or until the rice is almost cooked.


Add the chickpeas and kidney beans and cook for 1-2 minutes or until the rice is fully cooked.


Serve
