When I was growing up, every time we visited my grandparents there was a lemon cake waiting for us. Everyone loved my grans lemon cake and couldn't get enough! No one loved it more than my dad!
So obviously this vegan lemon cake will not compare to my grans cake but it is a close second!
I would definetly recommend this recipe!
I made this with plain flour, which is the one in the picture. Seeing how flat it came out, I would recommend making it with self raising flour. It's the only thing about this cake I wasn't extremly happy with!
I will re make this vegan lemon cake with self raising flour when I get the chance, and I will upload a new photo for you all to see!

Ingredients
Flaxseed Egg;
2 tbsp Chia Seeds
6 tbsp Aquafaba - This is the water or brine that chickpeas are kept in, in the tins.
Cake;
2 tsp Lemon Zest
1 ½ Cup Self Raising Flour
½ Cup Caster Sugar
1 ½ tsp Baking Powder
½ Cup Milk I used oat milk but any plant based milk will work.
2 tsp Cider Vinegar
2-3 tbsp Lemon Juice - Fresh is always best!
½ Cup Butter (Creamed) - I use Pure but any butter will work.
Mix the butter with a spoon to cream it. This makes it smoother.
Flaxseed Egg
Glaze;
1 Cup Icing Sugar
4-5 tbsp Lemon Juice - Fresh is always best!
Water
Method
* Prepare the flaxseed egg. Mix the chia seeds and aquafaba together and set aside.
* Preheat the oven 180C
* Grease your loaf tin
* Sift the flour and baking powder into a large bowl.
* Add the sugar.
* Mix in the lemon zest, juice, milk, vinegar, butter and flaxseed.
* Mix until smooth.
* Transfer the mix into your loaf tin.
* Bake for 30 -35 minutes or until a toothpick comes out clean.
* Let cool completely.
Glaze;
* In a small bowl sift the icing sugar.
* Stir in the lemon juice.
* Add the water a little at a time until the mix is smooth and pouring consistency.
* Using a toothpick, poke some holes in your cake.
* Pour your glaze on top.
* Let set for a few minutes before slicing
