Vegan Lemon Cake

What shouts summer more than a lemon cake?

This Vegan Lemon Cake is the perfect cake to start the summer with!


My Grandmother used to make us the most amazing lemon cake, every time we saw her. It was the best lemon cake anyone has ever eaten! Of course nothing will taste as good as that cake, but this one is a pretty close second!


This is such an impressive cake and anyone who tries it will love it!


As some of you may already know, I had to test a few recipes to decide which lemon cake to make my mums birthday cake with. This cake won! I will of course have to let you know what my mum thinks of it when she tries it next week, but everyone who has tried it so far has loved it!


I'm so excited to make my mums cake! It's going to be something I've never made before, so the pressure is on! I'm trying to keep it quite simplistic but still make it super impresive! I will have to let you know if I pull it off!


Although I wont be giving the design of the cake away, I can tell you that it is going to be a lemon cake with a lemon and elderflower butter icing covering it! How delicious does that sound!

Lemon Cake


Ingredients


Cake;

3 ½ Cups Plain Flour

¼ Cup Cornflour

2 ½ tbsp Baking Powder

¼ tsp Ground Turmeric

Zest from 1 Lemon

Juice from 1 Lemon

2 Cups Granulated Sugar

⅔ Cup Vegetable Oil

1 ⅔ Cup Milk - I use Oat milk but any plant based milk should work

2 tbsp Apple Sauce

1 tsp Vanilla Essence

1 tsp Lemon Extract


Glaze;

Juice from 1 Lemon

2 ½ tbsp Granulated Sugar


Icing;

1 ¼ Cup Icing Sugar

Juice from 1 Lemon

Water if needed


Method


Cake;


* Preheat the oven 180C, prepare your chosen large baking tin by oiling it.


* In a large bowl sift the flour, cornflour, baking powder and turmeric.


* Add the lemon zest.


* In the middle of the dry ingredients add the lemon juice, sugar, oil, milk, applesauce, vanilla and lemon extract. Mix well until smooth.


* Bake for 50-55 minutes or until a toothpick comes out clean.


Glaze;


* Once the cake is out of the oven start your glaze.


* In a small saucepan place the lemon juice and sugar.


* Bring the mix to a boil, to melt your ingredients.


* Lower the temperature and simmer the mix for 2-3 minutes, stirring constantly. If you don't stir constantly it will crystalise and harden.


* Once the cake is on the cooling rack brush the glaze over it.


Icing;


* In a small bowl sift the icing sugar.


* Add the lemon juice and mix until smooth.


* If it’s a little too thick, you can add a little water.


* Once the cake is completely cool, drizzle your icing sugar over the top.


* Keep in an airtight container until ready to serve


Serve
