Vegan Lemon Sponge Cake

It's lovely to see so many people baking at the minute! It's wonderful that with everyones free time they are taking up baking, and we want to help you all learn how and give you all some super tasty recipes to enjoy!

This Vegan Lemon Sponge Cake is a lovely refreshing cake for the whole family this summer.


It can serve 8-10 people and would be delicious served with a scoop of ice cream or a sprinkle of fresh berries.


I have recently tried Oatly vegan custard, I bought it from Tescos, I think that would taste amazing with this cake!

We also put some in the freezer, in a small lunch box, and turned it into icecream. That tastes amazing and even if you don't have it with this cake, I would recommend you try.


You could try putting a layer of jam with the butter icing, to make a lemon victoria sponge, but I'm not sure you wouldn't loose the lemon flavour in the cake.

Joss suggested trying some lemon curd instead of jam, this is a great summer flavour and I think would taste amazing. If you try either of those please let us know how it is, we are super excited to try it when we get the chance.


I would recommend only using a thin layer of icing in the middle and on top as it can take away the attention on the lemon flavour of the cake and butter icing can be quite sickly.


I used plain butter icing but if this cake has not got enough lemon for you add some lemon juice to the icing mixture to add extra flavour.

Start of with 1 or 2 tbsp of lemon use and taste it to decide if it is lemony enough.

If you don't have two baking tins the same size, you can put the whole mix in one tin and cut it into two once it has completley cooled.

However the cooking time will change doing this and you will probably need to put foil over the top to stop the cake from burning on the top before the middle is cooked.

Lemon Sponge Cake - Serves 8-10


Ingredients


Cake:

2 ½ Cup Plain Four

1 ½ Cup Caster Sugar

1 ½ tsp Bicarbonate of Soda

1 ½ Cup Vegan Milk - We use Oat milk but any plant based milk will work.

½ Cup Vegetable Oil

1 tbsp Apple Cider Vinegar

1 tsp Vanilla Essence

3 tbsp Lemon Juice

2 tbsp Lemon Zest


Icing:

250g Vegan Butter

500g Icing Sugar


Method


Preheat the oven to 180c.


Sift flour, sugar, bicarbonate of soda.


Mix.


Add milk, oil, vinegar, vanilla, lemon juice and lemon zest.


Whisk all together until smooth.


Divide mixture into 2 round tins.


Bake for 30 mins.


Let cakes cool completely.


Icing;


To make your icing, Start by creaming the butter. This is just softening the butter up so it looks creamy.


Then sift the icing sugar into the bowl and mix together.


Add a tsp of vanilla or lemon juice to add some extra flavour.


Ice the first cake and then place the second cake on top.


Ice and decorate the top cake. You can do this however you think looks nice, you can see in the picture that I just spread a layer over the top.


Serve
