Vegan Lemon Squares

Lemon is one of the best summer flavours so of course we had to use it. These vegan lemon squares are perfectly refreshing! They are the perfect summer treat!


These squares make a great snack, add some ice cream or cream for an amazing dessert or they would make the perfect party treat! Check out our sauces page to find some custard and creams you could match with these squares for dessert.


This recipe is easy to make and makes 20-25 squares; perfect for a party or the whole family to enjoy!

To make these lemon squares;


You first need to make the base. This is my shortbread recipe adjusted to add some ground almonds.


You can't taste the almonds but they are a super healthy addition. If you would like to taste the almonds; swap some of the flour for ground almonds - for example, take 50g flour out of the recipe and add 50g ground almonds.

Taste the dough to check if you can taste the almonds and add more if you aren't happy with the amount you can taste.


Almonds;

Almonds are loaded with nutrients, antioxidants and are high in vitamin E

They can assist with blood sugar control and can lower cholesterol levels.

Eating almonds reduces hunger, lowering your calorie intake. Therefore they could result in helping with weight loss

Once the base is baked you can begin to make the lemon curd.

This is super easy to make and just involved whisking the ingredients in a saucepan.


The turmeric doesn't add any flavour, it's just to help with the colour. You can leave this out.


Turmeric;

Turmeric contains bioactive compounds with powerful medicinal properties.

Turmeric contains curcumin which is a natural anti inflammatory and is linked to better brain health and lowering risk of brain disease.

Curcumin could lower your risk of heart disease.

Turmeric can help provent and may help treat cancer.

Turmeric is used to treat arthritis.

Lemon Squares - Makes 20-25


Ingredients


Base;

250g Butter

125g Icing Sugar

125g Cornflour

200g Plain Flour

50g Almonds

1-2 tsp Vanilla Essence

Lemon Curd;

4 Lemons Juice

1 ½ Lemons Zest

2 Tins Full Fat Coconut Milk - Chilled in the Fridge Overnight

â…” Cup Agave Nectar

4 tbsp Vegetable Oil

1 tsp Vanilla Essence

Up to ¼ tsp Turmeric


Method


Base;


Preheat the oven 180C and prepare a 26cm square baking tin.


In a large mixing bowl sift the icing sugar.


Add the butter to the bowl and cream the butter and icing sugar together.


Add the vanilla


Sift the flour and cornflour into the bowl.


Place your almonds into a food processor. Blend to create a powder.


Add the almonds to your bowl.


Mix together to create a dough.


Spread your dough evenly in your baking tin.


Use a fork to prick the shortbread


Bake for 20-25 minutes.


Curd;


Place the lemon juice and cornflour in a medium saucepan and whisk until there are no lumps.


Add the lemon zest, coconut milk (only use the solid cream), agave nectar, oil, vanilla and whisk together well.


Add the turmeric a little at a time until it is a colour you like. It will lighten slightly as it cooks.


Place it on a medium heat, stirring regularly.


Once it has become a thick mix pour it over your base and place in the fridge for 1-3 hours or until it has set.


Finish;


Once the lemon curd is set you can take it out the tin


Slice into 25 squares


Serve


Enjoy!
