Vegan Mac & Cheese

Why not give this vegan mac & cheese a try!


It's incredibly filling and it's healthy too. It's the perfect comfort food! You can't go wrong!


My mum makes this for my daughter and I when we go over for dinner. It's an easy way to get Maxine to eat her vegetables. Cover anything in a cheese sauce and she is happy!


The great thing about this dish is you can choose any veg you want to put in for your children and i'm sure they'll love it!


I think the mix of broccoli and cauliflower is perfect for this dish.


Katie and I made this for the first time last week so this was a little trial and error. Although we think it came out great, we would reccomend mixing the chia seeds in and not sprinkling them all over the top like we did.

You need to make your white sauce thicker than you would like the end result, when the dish goes in the oven the cheese sauce will thin.

Ingredients


300g Macaroni

140g-170g Grated Cheese + more for on top - We use Violife but any vegan cheese will work.

50g Butter - We use Pure but any butter will work

75g Plain Flour

500ml Milk - We prefer oat milk but any plant based milk will work

25g Chia Seeds

½ Broccoli - Cut into small florets

½ Cauliflower - Cut into small florets


Method


* Preheat the oven 220C


* Cook your macaroni according to the packet.


* Cook the broccoli and cauliflower al dente. So until they are nearly cooked but not quite.


* Melt the butter in a pan, over a high heat.


* Mix the flour with the butter to make a solid lump.


* Lower the heat.


* Slowly pour a little milk in at a time. Let the milk heat up slightly and then mix it in with the flour. - Don’t try to break the flour lump, just keep stirring.


* Keep mixing until you’ve created a thick mixture. You want it to be very thick because it will get thinner in the oven.


* Slowly mix the grated cheese into the white sauce.


* Mix the macaroni, vegetables, chia seeds and the cheese sauce together in a large oven dish


* Sprinkle more grated cheese over the top.


* Bake for 10-15 minutes.
