This vegan meringue recipe is so easy and perfect for any kind of meringue dessert you are making.
I had this idea when I was using chickpeas for a different recipe. I decided rather than waste the juice I would try and make meringue. I had never tried it before so decided this was the perfect time.
I was extremely happy with the way they turned out!
I had two trays of meringue drops but there was plenty of mix left for more!
This recipe can make roughly 75 drops depending on the size you make them.
Quick Tip:
If you find that after you have cooked your meringue and then left them for 40 minutes that they are a bit soft, try turning the oven back on and leaving them in for another 20-30 minutes.
What I found was that the tray nearer the top of the oven cooked much better than the tray in the middle of the oven. When I took the top tray out after the last step, I decided the bottom tray needed to go back in. I turned the oven back on to 100c and moved the tray on to the top shelf. Then I left them in the oven for another 25 minutes. They came out perfectly.
Helpful Tip:
Many of the recipes I looked at before making these meringues suggested using extra ingredients to ensure the mixture is thick. It is not essential that you use a thickening agent but if you would like something extra, try adding a tsp of cornflour. This will help to thicken the mixture and keep it held together.
If you are worried there will be a chickpea flavoured tang to the meringues, don't be!
I tried a spoon of the mix before putting them in the oven and I could taste a very small bit of a chickpea flavour. However, after cooking them that flavour was completely gone. The sugar took over and they were just as lovely and sweet as the traditional egg based meringues.
If you are unsure what to put with these meringues, I have a few ideas for you. Try and make a vegan pavlova! The berries and cream go perfectly alongside these meringue drops and are great for the summer time! Alternatively, why not try making a fruit or berry sauce to pour over the meringue? Just pour a 200g bag of frozen berries into a pot on low heat and add 2 tablespoons of sugar. Mix until thickened slightly, about 5-10 minutes. Let it cool or have it warm.
