Vegan Millionaire Shortbread

After quite a few requests for vegan millionaire shortbread I have made some super tasty slices!


This recipe makes 18 slices, they are sickly and everything you want in a millionaire shortbread!


I made salted caramel to go in the middle but if you don't want the salt you can just leave that out.


This recipe is super easy but so impressive! It's a perfect one for a family gathering or party.


I don't like a lot of caramel so this was the perfect amount for me, however a traditional millionaire shortbread has alot more caramel so if you would more, you can double the caramel recipe.


There's three steps to making this; the shortbread is the base, then the caramel for the middle and to top it off a layer of chocolate.


I would love to try the topping as a white chocolate, I think that would taste amazing! But you can use any chocolate that you would like.

To make this recipe, you first need to make the shortbread.


You can follow our shortbread recipe and bake it in a large 26" square baking tray.

Once the shortbread comes out of the oven you can begin the caramel.


It's super easy!


Add the sugar and water into a saucepan.


Boil this mix. Watch it closely and DO NOT STIR. This is super important! If you stir the mix it wont work.


You can swish the pan a little if you need to but absolutley no stirring.


After about 5 minutes the mix will begin to bubble.


The bubbles will begin to get smaller and the mix will get darker.


When this happens you need to have the oil and whisk ready to go.


When the mix begins to caramalize remove it from the heat and immedietly pour in the oil.


Whisk this mix straight away until the mix gets thicker.


Pour this mix onto your shortbread and place in the fridge to set.


This whole process needs to be done quite fast because it can very easily go to far and burn, caramelize or harden instead of becoming the soft caramel you love in a millionaire shortbread.

Next you just top the caramel with some melted chocolate and again place in the fridge to set.


Once set you can remove it from the baking tray and slice into 18 slices. They are quite large slices so if you want smaller ones you could half them to make twice the amount in squares.

Millionaire Shortbread - Makes 18 Slices


Ingredients

Shortbread - Check out my shortbread recipe.


Salted Caramel;

¼ Cup Vegetable Oil

¾ tsp Sea Salt (Optional)

1 Cup Caster Sugar

3 tbsp Water


Topping;

1 ¼ Cup Chocolate


Method


Shortbread;


Make our shortbread recipe, baking it in a large 26” square baking tray.


Caramel;


In a medium saucepan, add the sugar and water.


Boil, watching very closely and do not stir. If you stir the caramel wont work! You can swish the pan if you need to but that is it.


After about 5 minutes it will begin to bubble.


The bubbles will begin to get smaller and the mix will get slightly darker. You need to have your oil and whisk at the ready.


When the mix starts to caramelize remove from the heat and immediately pour in the oil.


Stir with a whisk until the mix thickens


Pour mix onto your shortbread and place in the fridge to set.


Topping;


Melt your chocolate and pour over the caramel.


Let set for 1 -2 hours in the fridge or 30-60 minutes in the freezer.


Once completely set you can remove from the tin and cut into slices.


Serve
