Vegan Mince Pies

What is one of the traditional Christmas treats you think of at this time of year? That's right, mince pies!


Mince pies can be traced back to the 13th century, when returning crusaders bought back Eastern European recipes.


These vegan mince pies will not disappoint!

This recipe makes a batch of 12, perfect for the whole family!


I make at least 3 lots of these mince pies every year, usually more. My husband and dad are both in love with mince pies "It's not Christmas without mince pies!". Everyone else in my family enjoy some mince pies too, nothing like those two though.


These are a great thing to make if you have some friends or family coming over in December!


Katie and I often make these for Christmas eve and/or boxing day!

My family spend all 3 Christmas days together, we have loads of food to enjoy!

We clean the house, prepare dinner for the next day - usually this includes cooking some of the things for Christmas day as there is always so much food, and then we watch Christmas movies in the evening!

We used to walk round the town that we lived in, to see all the Christmas lights, but over the years people stopped putting them up and now you don't see many.

Ingredients


Pastry;

300g Plain Flour

200g Butter I use Pure but any plant based butter will work.

100g Caster Sugar

2-3 tbsp Water


Mincemeat


Method


* Place the butter and sugar in a large mixing bowl.


* Sift the flour in the same bowl.


* Use your fingertips to rub together into breadcrumbs.


* Knead in the water to create a dough.


* Knead into a ball, wrap in cling film, put in the fridge for 2 hours. If you don't leave it long enough the dough will be too sticky and wont come off the surface you roll it on.


You could place it in the freezer for 30 minutes.


* Preheat the oven 180C


* Grease a muffin tray.


* Roll the dough out, cut out 12 large circle shapes.


* Gently press a circle into eat space, in the muffin tray.


* Fill the pastry ¾ the way up, with mincemeat.


* Cut out 12 circles to fit over the pastry.


* Rub milk on the edges of the circles before fitting the lids, press the edges together gently.


* Brush milk over the top of the mince pies.


* Bake 15-20 minutes.


* Sift icing sugar over the mince pies when they come out of the oven.


Serve
