Vegan Mixed Bean Rolls

Who doesn't love when the sun comes out every year? It's the time for summer food, light bites and relaxing!

I know everything is very difficult at the minute but while your at home, enjoying the sun in your garden, why not try these super tasty vegan mixed bean rolls.


This recipe is so easy to make and so worth it! Just like sausage roll for meat eaters, these mixed bean rolls are a great summer lunch, dinner or snack. They go so well with some salad and/or beans. They make a great meat replacer for your meals so you can have mash potatoes on the side, boiled vegetables or anything else that you enjoy!


If you are looking for a healthy snack that tastes great hot or cold, this is perfect for you!


Ideally I would have liked to make the puff pastry as well, instead of buying it from the shop, but unfortunatley that is very time consuming and makes this very quick recipe an all day one.

I will, of course, be trying to make puff pastry and others at some point, but unless someone requests it sooner, it probably wont be until my little girl is in school.

Puff pastry non vegan takes several hours but vegan takes most of the day. This is because when you put solid butter in your pastry, fold it and then put it in fridge again to keep the butter hard and stop it from melting. Vegan butter melts so much quicker so you have to put it in the fridge more frequently and for longer periods of time.


You can buy the ready made vegan puff pastry from tescos, which is where I bought it from, I'm sure you can buy it from other supermarkets too. It comes as 1 big sheet, which for this recipe I then cut in two.

You want to cut the pastry sheet lengthways down the middle, you want to make one big sausage roll before you split it into lots of little ones.


You can add any other beans that you like to this recipe, for example kidney beans. You can also add some cheese or any other salad that you like.

This recipe is a super flexible one so great for the kids to help you make or you could let them pick what else can go in it.

Mixed Bean Sausage Rolls - makes 8


Ingredients


½ sheet of Vegan Puff Pastry - Slice the whole piece lengthways - You can find this in the supermarket. I bought this from Tescos but I'm sure some of the other supermarkets must sell it.

200g Tin Black Beans - Drained & Rinsed

200g Tin Cannellini Beans - Drained & Rinsed

You can also add 200g kidney beans or any other beans.

2 tsp Ground Cumin

1 tbsp Nutritional Yeast

1 tsp Onion Granules/ Powder

½ tsp Ground Ginger

½ tsp Ground Coriander

2 ½ tbsp Porridge Oats

Salt & Pepper to taste

If you want to add some heat to these you can add some chilli flakes.


Method


Preheat the oven 200C and prepare a baking tray.


Mash all the beans and spices together in a large bowl.


Add the oats and mix to combine.


On one side of the puff pastry, leaving about 1/2cm gap, place your mix in a sausage shape along the whole side.


Brush the edges of the pastry.


Roll the pastry over the mix to the over side and press gently to seal it.


Slice into small pieces about an inch or 2, depending on what size you would like them to be.


Make a little slit in the top of the pastry to let the steam out.


Bake for 20-25 minutes.


Serve
