I hope that everyone is enjoying some extra family time, I know times are tough and it's can be super boring inside but we will all get through this.
In the mean time, while you and your kids are at home bored, this is the perfect time to do lots of baking! We have some great recipes already on the blog and some amazing ones coming. This vegan mixed bean salad is no exception!
This salad is super easy to make, it tastes amazing and is a great recipe for those sunny days!
In our family when the sun comes out we mostly eat salads for lunch and dinner, so I'm sure you can expect some more salad recipes.
We are trying to keep recipes easy for all to make and not many ingredients at the moment. There will, of course, be some recipes that have more ingredients or are a little more complicated but we are trying to make it possible for people who don't bake much, to get started and find their love of cooking!
I hope that everyone will find our recipes fun, good for the whole family and easy to make. I have always tried to make my recipes with recipes that are super easy to find and that you can mostly get into the supermarkets. There are so many bloggers that use ingredients that you have to order online for a ridiculous amount of money, I find it hard to believe that people are making those recipes, who can afford it!
When I fancy making something I tend to find the recipes online, pop to the shop to buy them and then come home and crack on. So if I have to spend loads of money on one ingredients and then wait 4-5 days for it to arrive, I wont want to make that recipe anymore.
I hope that mostly people find this about my blog, and of course I would be greatful if you could share this with friends.

I seperated the salad and the dressing information as I'm sure some people wont want the dressing or will add their own dressing.

Mixed bean salad - Serves 2
Ingredients
Salad;
1-2 Cups Lettuce - Diced
1 Pepper - Diced
1 Red Onion - Diced
1 tin Mixed Beans - Drained & Rinsed
Dressing;
1 tbsp Balsamic Vinegar
2 tbsp Olive Oil
1 tbsp Dried Chives
Salt & Pepper - To Taste
Method
Dice all the salad
Place all the salad and the beans in a bowl, mix to combine.
Mix all the dressing ingredients together in a separate bowl and then pour it over the salad.
Stir together to cover the salad in dressing.
Serve
Enjoy!
