Vegan Multi-Seed Loaf

If you love seeded bread you will love this vegan multi-seed loaf, it's perfect for some small sandwhiches and or to dunk in some soup!


This recipe is a pretty easy one with a fantastic result! It makes quite a small loaf but perfect size for small sandwiches.

This is a healthy loaf, filled with lots of my favourite seeds; You can swap the seeds out for your favourites or even remove some and and use more of others.


This is a pretty standard bread recipe with the added seeds and some oats, it's a great recipe for beginners.


Sesame Seeds;

Sesame seeds are full of fiber, protein, vitamjns and antioxidants.

They may help protect again heart disease, diabete and arthritis.

Sesame seeds could help lower cholesterol and blood sugar, reduce inflammation and may help support healthy bones.


Chia Seeds;

Chia seeds are among the healthiest food in the planet.

They were an important food to Aztecs & Mayans. "Chia" is the Ancient Mayan word for "Strength"


They are loaded with nutrients; Fiber, protein, vitamins, fiber, antioxidants and contain very few calories.

Chia seeds may help aid with weight loss, lower risk of heart disease and reduce blood sugar levels.


Poppy Seeds;

The poppy plant has been used as a traditional remedy for centuries.


Poppy seeds are rich in antiocidants, protein, fiber and minerals.

They may contain pain relieving compounds and may boost heart & skin health.


Sunflower Seeds;

Sunflower seeds are full of vitamins and minerals.

They may help reduce risk of heart disease, type 2 diabetes and may help with inflammation.

Multi-Seed Loaf


Ingredients


Dough;

1 Cup Warm Water

2 ¼ tsp Instant Yeast

2 tbsp Golden Syrup

2 tbsp Olive Oil

1 ¼ Tsp Salt

½ Cup Oats

3 tbsp Sesame Seeds

2 tbsp Chia Seed - You can use Flax seeds.

2 tbsp Poppy Seeds

2 â…“ Cups Bread Flour

You can swap any of the seeds for other seeds.


Top;

2-3 tbsp Milk

2 tbsp Sunflower Seeds

1 tsp Chia Seeds

1 tsp Sesame Seeds

1 tsp Poppy Seeds


Method


Dough;


Sift the flour into a large mixing bowl.


Pour the water into the middle of the flour.


Add the yeast into the water.


Add the rest of the ingredients into the bowl.


Mix all the ingredients together to make a dough.


Knead until your dough is pliable, about 10 minutes.


Roll your dough into a ball.


Lightly oil a large bowl, place the dough in the center, cover with a clean tea towel and place in a warm place to rise for 1 hour or until doubled in size.


Lightly oil a loaf tin.


Knead your dough for 1-2 minutes.


Turn your dough into a log shape and place in the center of your loaf tin.


Cover with a clean tea towel and let rise for 30 minutes or until doubled in size.


Top;


Preheat the oven 170C


Mix the seeds in a small bowl.


Brush the milk over the loaf


Sprinkle your mixed seeds over the top of your loaf.


Place the loaf in the oven for 30-40 minutes or until it sounds hollow.


Let cool a little before removing from the loaf tin.


Serve
