Vegan Orange & Raspberry Sponge

Hi guys, I hope you guys are managing okay in these difficult times. I know I haven't been posting much at the minute, it has been a long few weeks. We have had some sunshine which has been great, we have been playing in the garden, doing lots of gardening and lots of walking the dog. We haven't lived in this house for very long so we haven't had time to get to alot of jobs that have needed to be done, one of those jobs being sorting the garden, thankfully the sun has been shining so we have been taking the opportunity to get it sorted. This garden hasn't been touched in over 5 years but has had more rubbish and glass thrown into the plants, so it is taking alot of effort to sort it out. It is however already looking so much better.


With the sun shining, it is a good time for some summer recipes! This vegan orange & raspberry cake is the perfect spring/summer dessert! This cake is moist and super tasty! Who doesn't love raspberries!


You could easily swap the raspberries for strawberries or anything else you like the sound of!


This recipe is really easy to make, there is a youtube video of this one being made so go and check that out!

Because we are in lock down, I can't make any youtube videos. Katie does all the filming and editing for me with youtube videos.

This recipe and video was made by Katie, she has been getting lots of recipes and videos made for you all. While she isn't working she's got lots of time to help me with recipes so you can expect quite a few to be coming soon!


You can easilly make this recipe gluten free if you need to, you just need to change the flour to gluten free flour.


Why not try this cake with some ice cream, what a perfect end to a lovely sunny day! Who doesn't love icecream!

You can also try this cake with some icing on top, that would also taste amazing!


This cake is a great one to make with your kids; baking s a great way to bring out kids creative side, use up some energy and just teach them some valuble life lessons!

Orange & Raspberry Sponge - Serves 8


Ingredients


1 ½ Cups Plain Flour

2 tsp Baking Powder

½ tsp Bicarbonate of Soda

1 tbsp Ground Flaxseed

½ Cup Caster Sugar - We use golden caster sugar but normal would work.

½ Cup Milk - We use Oat milk but any plant based milk will work.

⅓ Cup Fresh Orange Juice

⅓ Cup Vegetable Oil

1 tsp Vanilla Essence

Zest from 1 Orange

2 tsp Apple Cider Vinegar

⅔ Cup Raspberries


Method


Preheat the oven 180C and grease a round cake tin


In a large bowl, sift the flour, bicarb and baking powder.


In a separate bowl add the milk, orange juice, oil, flax seed, sugar, vanilla, zest and vinegar. Mix to combine it all.


Add the wet into the dry ingredients and mix until smooth.


Pour the mix into your prepared tin.


Place the raspberries on the top of the mix. Try and spread them out evenly so every piece of cake gets and even amount.


Bake for 45 minutes.


Place foil over the top of the tin 20 minutes - This helps stop the top of the cake from burning


Serve
