Vegan Pancake Cereal


How cute are these tiny pancakes!

Have you seen this trend? I made vegan pancake cereal for the trend and I loved it!

I was a bit skeptical but I'm so glad I made these!


I honestly can say this is a great way to start the morning, with a bowl of tiny pancakes!


Belive it or not it tastes amazing with some milk!

Both Joss and Katie thought I was crazy for adding milk, but after trying it Joss couldn't agree with me more. Unfortunately Katie hasn't been able to try it yet but she is already planning to make some to try!

The pancake mix is super easy to make! It takes 5 ingredients and takes only about 5 minutes to whip up.


It is a little harder after this though.

I highly recommend using a piping bag for this, if you have one!

I tried using a jug to pour a small amount of mix out, this unfortunately does not work.

I then tried using a spoon to put a small amount of mix, but again that didn't work.


Using a piping bag creates the right shape and small enough pieces.

I have a pancake maker so I filled that with these tiny little dots.

I highly recommend buying one of these, if you eat alot of pancakes, it cooks pancakes evenly with no oil and you can take longer to flip them as it wont burn them.


You could change the shape if you wanted, but they are so small I don't think it gives you much room for it.


It does take quite a while to make these tiny pancakes, you have to be quite careful piping, flipping and transfering to a bowl.


There are so many things you could put with your pancakes; fruit, chocolate chips or like me you could put milk.


I embraced the cereal and enjoyed some milk with it. I think it went really well together! The vanilla flavour in the pancakes goes really well with some oat milk!


This is a great way of keeping things fun and interesting for you kids while you are all in lockdown!


It doesn't have to be a breakfast, it could be dessert or just a well deserved treat in the day!


I'm sure your kids would love to help you make them!

Pancake Cereal - Makes 2 Bowls


Ingredients


250g Self Raising Flour

6 tbsp Caster Sugar

2 tsp Baking Powder

300ml Milk - I used oat milk but you can use any plant based milk

1-2 tsp Vanilla Essence - I like to really get the vanilla flavour when I eat the pancakes but you can use less if that's what you like.


1-2 tsp Vegetable Oil to fry


Method


Sift the flour and baking powder into a mixing bowl.


Add the caster sugar. Mix to combine.


Pour in the vanilla essence and milk


Mix until smooth.


Transfer the mix to a piping bag and cut a very small whole at the end.


Heat the oil in a small frying pan.


Turn the heat down to medium and pipe small circles of pancake dough.


Cook for 30-60 seconds and then flip and repeat.


Transfer to a bowl.


Serve


Enjoy!
