
These Vegan Peanut Butter Bars are the perfect treat for all of your peanut butter lovers. It takes around 30 minutes to make and makes 9 bars. These have a soft tasty base with a rich chocolate topping. They are high in protein while also being a tasty treat.
This recipe made around 8 bars, but this can vary depending on how small or large you slice them. You can freeze these bars and defrost them when you are ready to eat them. They will only take an hour or so to defrost.
The best thing about these bars is that they require no cooking in the oven, and so are great for making with your kids during isolation. The recipe is easy and with only 4 simple ingredients, you will probably have most of them already.
They are perfect for parties or gatherings and popular with all ages. If you have a birthday coming up during this time of isolation, these would be a great treat to surprise any family member with.
Try adding a couple tablespoons of oats to the base mix if you would like something a little more chewy as these bars are very soft.
If you want to make them even more sickly you could add some chocolate chips into the base, making them even more desirable for a chocolate lover.
When cutting the bars into slices, try warming up your sharp knife to help to cut cleanly through the hard chocolate.

Peanut Butter Squares - Makes 9
Ingredients
Base:
1 Cup Peanut Butter
1 Cup Flour
¼ tsp Vanilla
1/4 Cup Vegetable Oil - Coconut oil is healthier if you have the option to use it.
Topping:
1 Bar Vegan Dark Chocolate - About 100g
⅓ Cup Peanut butter
Method
Mix Flour, Oil, Vanilla and Peanut Butter together until well combined.
Line a small baking tray.
Spread the base mix onto the baking tray and put in the freezer for 10 minutes while you prepare the topping.
Boil water in a small cooking pot. Place a glass mixing bowl over the boiling water.
Separate your chocolate into pieces and put into the glass bowl.
Stir chocolate continuously until melted.
Add the peanut butter until smooth.
Remove from heat.
Pour onto the base
Place in the freezer for 30 minutes.
Cut into 9 Squares
Serve
