Vegan Peanut Butter Cups

If you love peanut butter and chocolate these vegan peanut butter cups are the perfect sweet treat for you!


These are so easy to make; the hardest part is waiting for them to set before you can eat them!


Maxine, my 2 year old daughter, couldn't get enough of these. If I had let her she would have eaten them all in one go.


Joss has always loved Reeses peanut butter cups, whenever I went to a shop and saw them I used to pick them up for him. I knew he was going to love these when he tried them, and I was right!


If you store these in the fridge they should last 5-7 days.

To make these peanut butter cups;


Line a cupcake tray with cases. I used silicone cases but I'm sure paper ones will work too.


Place the chocolate and oil in a small bowl.


Microwave for 30-40 seconds to melt the chocolate. Stir the mix to make sure the chocolate and oil are mixed together.


Scoop 1 tsp of chocolate into each case and smooth it out.


You can use a little more chocolate if you want a thicker chocolate layer.


Place in the freezer for 10 minutes.

Place the peanut butter, golden syrup, oil and sea salt in a small bowl.


Mix together to combine the ingredients


Place this in the microwave for 15-20 seconds or until the mix is runny enough to scoop into the cases.


Spread the peanut butter evenly between the cases and smooth it out.


Place it back in the freezer for 5 minutes.


Spread the last of the chocolate over the peanut butter and smooth it out.


Place them back in the freezer for 30 minutes.


Remove the cases


Serve and Enjoy!

Peanut Butter Cups - Makes 12


Ingredients


Chocolate Layer;

1 - 1 ½ Cup Chocolate - Broken into smaller pieces.

1 tbsp vegetable Oil - You can coconut oil too


Peanut Butter Layer;

½ Cup Smooth Peanut Butter

¼ Cup Golden Syrup - You can use maple syrup

2 tbsp Vegetable Oil

Pinch Sea Salt (optional)


Method


Line a cupcake tray with cupcake cases.


Place the chocolate and oil in a small bowl.


Microwave it for 30-40 seconds or until the chocolate has melted.


Mix well to make sure the oil and chocolate is mixed together.


Scoop 1 tsp of chocolate into each cupcake case and smooth it out across the bottom.


Place in the freezer for 10 minutes.


Place the peanut butter, golden syrup, vegetable oil and sea salt in a small bowl.


Mix together well.


Place in the microwave for 15-20 seconds or until the mix is runny enough to scoop into the cases.


Spread the peanut butter mix evenly between the cupcake cases.


Place them back in the freezer for 5 minutes.


Using the last of the chocolate scoop 1 tsp of chocolate on top of the peanut butter and smooth it out.


Place it back into the freezer for 30 minutes


Remove the cupcake cases.


Serve


Enjoy!
