Vegan Peanut Butter Fudge

Do you love peanut butter? Then this is the perfect recipe for you!


This vegan peanut butter fudge is amazing! It is like little pieces of peanut butter but instead of having to spread it onto toast you can eat big chunks of it!


We used to buy my dad fudge every year for christmas, we would get him rum & raisin and a mix of other flavours. So of course I had to try making some fudge and put it to the test! I had the whole family try my fudge and they all really enjoyed it, my brother asked me to make him a whole box full.

Maxine, my 1 year old, also really enjoyed it. The texture seemed to help with her teething, which is always something I'm looking for.


You can make about 30-50 pieces of fudge, this of course depends on how big you make the pieces. I didn't measure mine, to make them all the same size, as I had some very eager people waiting to taste it but I made 40 pieces.


I've made this recipe twice, the first time I melted the peanut butter and butter in a glass bowl, over a saucepan. However that caused the butter to become very oily, which made the fudge split and it wouldn't set properly.

I have found that if you melt them in the microwave, this problem doesn't happen. It also makes the recipe super quick to make.

You can whip this fudge up in under 10 minutes and then it's just waiting for it to set. Perfect if you want to make it in the morning ready for the evening!

Peanut Butter Fudge - 30-50 depending on size


Ingredients


1 ½ Cups Butter - I use Pure but any plant based butter will work

1 Cup Smooth Peanut Butter

1 tsp Vanilla Essence

3 ½ Cups Icing Sugar


Method


* Line a loaf tin with baking parchment, leaving enough extra to fold over the top


* Place the butter and peanut butter in a microwave safe bowl. Microwave for 1 minute at a time, stirring in between, for 2-4 minutes or until it’s melted. My microwave is 800w and it only took 2 minutes.

It has to go in the microwave. I originally tried to make this by melting the ingredients in a glass bowl, over a saucepan. I'm not sure why but the butter becomes very oily which makes the fudge split and not set properly.


* Stir in the vanilla essence


* Sift the icing sugar.


* Mix well until the mix is thick.


* Pour into your loaf tin.


* Fold the excess parchment over the top of the fudge.


* Place in the fridge for 3-4 hours to set. Overnight is the best length to leave it.


* Remove from the tin, remove the baking parchment and cut into small pieces.

As you can see by the picture I didn't measure to make sure all the pieces where the same size. You can make roughly 30-50 depending on the size you choose to cut them into.
