These Vegan Peanut Butter and Jam cookies are perfect for anyone who loves peanut butter as much as me!


This recipe makes about 9 deliciously soft cookies. They are rich in flavour so you won’t need many to fill you up.


This is a pretty quick and simple recipe, which makes it perfect for late night snacking, or for when you're feeling lazy.


These peanut butter biscuits are quite soft and can be quite crumbly, but they hold together better when they have cooled down. So, have some patients and give them about 20-30 minutes before you eat them.


You can use any flavour of jam that you prefer. I used strawberry jam, which goes great with peanut butter. We have a blackberry jam recipe you can use if you're making your own jam. You can easily swap which fruit to use to make a strawberry jam or any other type of jam you would like.


Peanut butter and jam cookies are a great movie night snack and is perfect for sharing with friends and family.

Peanut Butter & Jam Cookies - Makes 9


Ingredients


1 Cup Plain Flour

½ tsp Bicarbonate of Soda

½ tsp Baking Powder

1 Cup Smooth Peanut Butter

½ tbsp Butter, Softened - I used flora but you can use any plant based milk.

¼ Cup Jam - Check out our blackberry jam recipe here. You can easily change the fruit in this recipe to make whatever type of jam you would like.

Splash of Milk if the mix is too dry


Method


Preheat the oven to 180c.


Sift together the flour, bicarbonate of soda and baking powder.


Mix in the peanut butter and the butter. Add a splash of milk if the mix is too dry.


Take 2 tbsp of dough and roll into balls.


Flatten the balls on a lined baking tray.


Bake for 8 minutes.


Remove from the oven and use the back of a tsp measuring spoon to press a dent into the cookies.


Fill the hole with jam.


Bake for another 15- 20 minutes.


Let cool before serving. The cookies will become firmer as they cool.


Serve
