
These Vegan Pecan Butter Cookies are the quick and easy recipe you need at this time of year! They are simple enough for all the family to join in and help and they are sweet and delicious.
Pecans are a great crunchy addition to this classic sugar cookie. The sweet butteriness of the pecans mixes perfectly with the sweet butteriness of the cookies.
The cookies don’t spread when baking in the oven so you can place them quite close together on the baking tray. Which is great for inpatient family members who don’t want to wait for a second batch.
This recipe makes 10-12 biscuits and they will last for up to five days if they are kept in a secure container.
Pecans;
Pecans are rich in important nutrients and fiber.
Pecans contain a fat that may be beneficial to heart health and they help with brain function.
Some research suggest that pecans can help stablalise blood sugar.

Pecan Butter Cookies - Makes 10-12
Ingredients
½ Cup Pecans
½ Cup Vegan Butter
⅓ Cup Caster Sugar
1 tsp Vanilla
1 Cup Plain Flour
Method
Preheat the oven to 180c.
Cream together the butter and sugar.
Mix in the vanilla and pecans.
Fold in a quarter of the flour at a time.
Form 10-12 balls from the mix and place on a lined baking tray.
Cover the back of a spoon with flour and use it to flatten the biscuits.
Bake for 20-30 minutes until golden.
Let cool slightly before serving.
Serve
