Vegan Peshwari Naan

As the weather begins to get colder again we have started to have some warmer meals again; one of our favourite cold weather meals is curry, as you probably can tell from the amount we have on the blog.

Joss especially is in love with a good curry, he was brought up eating curry alot. Nothing goes with a curry better than some naan bread! I usually make the other Naan bread recipe but Joss asked me to make vegan peshwari naan so of course I had to give it a go!


These naans are super easy to make, and I think super fun. I love to make things with my hands; things like bread, where you have to knead the dough, is a great way to relieve stress and it's super fun. It's a great thing to get your kids involved in.


Traditional Peshwari Naan has coconut, fruit and nuts. We didn't use this on ours as my daughter wouldn't eat it then but I have written it in the recipe for you so you can make them however you like.

If you don't want to add the filling just ignore that part and move to the next part, the rest of the recipe is exactly the same.


The recipe makes 3 large naans but you can make small ones, you could proably make about 5 smaller ones but still a decent size.


This recipe is great if you are looking to mix up your currys, if you are used to have a plain naan or the same naan every time, it's great to try something new. Especially in this time while we are all locked inside, it's a great way of mixing things up a little bit.

Peshwari Naan


Ingredients


2 ¼ Cup Plain Flour

1 ½ tsp Dried Active Yeast

1 tsp Granulated Sugar

100g Yoghurt - This can be any plant based yoghurt of your choice, however to make a traditional peshwari you want it to be coconut.

150ml Warm Water

1 tsp Salt

2 tbsp olive Oil

Butter to cook - I use Flora but any plant based butter will work.


Filling; I didn't make the filling for my naan as my daughter would hate it but a traditional peshwari naan has the filling so you can choose if you would like it.

1/4 Cup Almond Flakes

100g Sultanas

1/2 Cup Coconut - Desicated or grated

Onion Granules - These are just to sprinkle over the top so you don't need a lot, however it's however much you would like to use.


Method


In a small bowl add the warm water, sugar and yeast. Set aside for 5 minutes or until the mix starts to bubble. The bubbles let you know the yeast is active, which means your dough will rise. If you don't get bubbles start again.


In a large bowl sift the flour.


Add the salt, oil and make a well in the middle.


Add the yeast mix and yoghurt and mix so all the dry flour is wet.


Lightly flour a clean surface and place the dough on it. Flour your fingertips. You need to flour your fingertops as the dough is very sticky and you wont be able to work the dough if it just keeps sticking to you.


Knead the dough until it’s smooth, soft and shiny.


Lightly oil a clean bowl, place the dough in the bowl and turn to cover it lightly with oil. Cover the bowl and let rise 1 - 1 ½ hours or until dough has doubled in size.


Knead the dough for a furth 5-6 minutes.


Divide the dough into 3 pieces and rolls into balls.


Flattern the ball a little, add 1 third of the sultanas, coconut and almond flakes.


Bring the edges of the dough into the middle to seal the filling in.


Shape your naans - You can gently spread the dough with your fingers or use a rolling pin. Be careful not to let the filling come out.


Heat a little butter in a frying pan


Place 1 naan at a time in the frying pan. Fry each side till brown, you should see some bubbling. The naan bread will bubble as it browns, some of the bubbles may stay in the naan, this is okay!


Repeat until you’ve cooked all 3.


Serve
