Katie and I are always looking for new recipe ideas, especially at this time of year. Christmas a huge deal in our family, not for the presents but for the amazing food and the good company!
We make Christmas day such a fun and amazing day that when us children of the family grew up and got partners, we never wanted to celebrate Christmas at our in-laws houses because they "don't do it right".
Presents last all day; we watch each person unwrap one present each, there is lots of chatting and laughter in between, we go and sort dinner when needed and it's just so much fun overall.
Lunch lasts for abour 2 hours, sometimes longer. We enjoy lots of food, we chat and laugh alot at the dinner table, wait for our lunch to go down and then have dessert.
After dinner we finish off the presents, clean up from lunch and share out the left overs.
When we were younger, and still living at home, we would all sit down and watch at least one of the dvds that we would all get in our stockings. Usually at least 2 of us would fall asleep.
It's such an amazing and fun day, with the whole family, and it's something that I can't wait to be able to do with my 1 year old daughter. This year she is old enough to do at least a few of our traditions and i'm so excited to make new ones with her.
We do so much Christmas cooking in December, now that i've started this blog, I couldn't wait to do and share as much as possible.
I started this blog to help people with allergies, or who have children with allergies, find easy to follow and affordable recipes. Christmas is often the time that children join in with your cooking and help you decorate, so it's even more important to me, that I get the recipes out for everyone!
This recipe is no different. It is one that the kids can get involved with. They will love it! The pesto involves mostly using a food processor, and if they are anything like I was as a young child, they will love to help with that.
The dough needs to be made 1-2 days before you plan to make your pinwheels. If you are like me and don't decide what you would like for dinner until the day, this isn't the most convenient thing, but trust me it is so worth it!
To make the pinwheels, you need to spread the pesto and sun-dried tomatoes on the dough and roll it up. Then cut into slices and cook them. My sister and I always loved doing this with my parents, and I'm sure your children will too!
The recipe is an easy one to follow. The dough is the most difficult part but as long as you follow the recipe, you shouldn't have any problems! The rest is super easy to do and it creates such tasty results!
You can sprinkle nutritional yeast on top of the pinwheels before they go in the oven, this is great for some extra protein, vitamins and minerals.
We use nutritional yeast alot, my daughter is very small and struggles to put weight on, this helps to ensure she has what she needs in her diet when we eat something like this. I try to feed her enough seeds, nuts ect but in some things that isn't always possible.

Ingredients
Dough; Make 24-48 hours before needed.
1 Cup Milk We use Oat milk but any plant based milk will work.
1 ½ tsp Salt
2 tbsp Caster Sugar
2 ¼ tsp Dried Active Yeast
¼ Cup Olive Oil
1 tsp Oregano
1 tsp Garlic Powder
1 tsp Basil
3 Cups Plain Flour

8 Sun-dried Tomatoes - Chopped
Method
Dough;
* Make the dough 24-48 hours before you want the pinwheels.
* Warm your milk up
* In a large bowl add milk, salt, sugar and yeast. Let this sit for 10 minutes or until you see bubbles. The bubbles let you know that the yeast is activated.
* Add the oil, garlic powder, oregano and basil
* Sift the flour gradually to make the dough
* Knead the dough for 5-7 minutes.
* Shape the dough into a ball.
* Put the dough in a lightly oiled bowl, cover with cling film and leave in the fridge for 24-48 hours.
* 1 hours before making the pinwheels, take the dough to rise at room temperature.
Assembling;
* Preheat the oven 210C
* Roll the dough out, into a rectangle, about 1cm thick.
* Spread the pesto all over the dough.
* Sprinkle the sun-dried tomatoes over the pesto.
* Roll the long side up,
* Pinch the edge together to keep the filling in.
* Cut the two ends off
* Cut into roughly 11 equal pieces.
* Place onto a baking tray
* Bake for 8-10 minutes.
