These vegan potato cakes make an amazing snack, picnic or dinner! They are super easy to make and they taste amazing!
This recipe is a super easy one to follow and a great one for the whole family.
These would also be great on the bbq, the extra smokey flavour would taste amazing!

To make these vegan potato cakes you first need to start the dough;
Peel and small dice your potatoes
Boil the potatoes for 20 minutes or until soft enough to mash.
Season them, to taste, and mash your potatoes.
Let this cool while you make the filling.
Filling; Small dice all the vegetables. You can change which vegetables you would like in the middle to whatever your favourites are.
Fry all your vegetables for 10-15 minutes or until tender.
Finish the dough;
Once the mash potato is cooled you can sift the flour and cornflour in.
Mix together to create a dough.
Finish potato cakes;
Use 1/2 cup to portion your mix. This should make 7
Roll each one into a ball
Create a well in the middle of each ball and put 1 1/2 tsp of filling into each ball.
Seal the balls back up. You can just reconnect the potato and roll it a little to seal it completely.
Gently flattern each ball into a thick pancake.
Fry each cake for 3-4 minutes on each side. Or until golden brown.
You can also fry the sides to brown them up or place them in the oven 190C for 15-20 minutes to add a little extra crunch.
I would like to try placing them in the oven completely instead of frying them. I think they would come out a lovely crunchy potato cake.
You could also add some cheese to the filling. It would melt in the oven and I think this would be amazing!

Potato Cakes - Makes 7
Ingredients
Dough,
1 kg Potatoes
80g Plain Flour
40g Cornflour
Filling; You can add whichever vegetable you would like for the filling but these are what I used.
1 Carrot
â…“ Small Cauliflower
â…“ Small Broccoli
½ Leek
1 Pepper
Salt & Pepper to Taste
You could also add some cheese. This would taste amazing!
2tbsp Vegetable Oil for frying
Method
Dough;

Spoon 1 ½ tsp of filling into each potato.
Seal the balls back up
Gently flatten the potatoes to create a thick pancake.
Heat the oil in a large frying pan.
Fry each potato cake for 3-4 minutes, or until golden brown, on each side.
You can fry the sides to brown them too or place in the oven for 15-20 minutes 190C to add an extra crunch.
Serve
