Vegan Pumpkin Cookies

Everybody loves cookies right? Well why not try these Vegan Pumpkin Cookies!


I'm a little late with the pumpkin recipes, I know, my brother just gave me two giant pumpkins as he had them left over and he didn't think he could use them.


Of course I was up to the challenge of using them.

I have made a few new recipes for you all to look out for.

I greatly enjoyed finding new pumpkin recipes, some dinner and some desserts.


I'm hoping some of you will still get some use out of these recipes, but they are ready for Autum next year.


These cookies are great! They taste amazing, they have the perfect texture and you can even add some chocolate chips to make them even better!


I didn't get much of a chance to make autum and halloween recipes this year, I was moving house and my daughter was teething, so things got in the way.

I was very excited to get started with finding these recipes. I think I found some that eveyone will enjoy! This one in particular was tested on my husband and daughter to make sure it is "up to snuff". Both of them really liked them, my 1 year old seems to particularly like them while she's teething.


These cookies are going to be used as the base for a cheesecake. I'm super excited to try that out, and i'm praying that it works well!

With a little luck the cheesecake will taste amazing and look fantastic! Just like it does in my head!


The recipe needs pumpkin puree, I have found this rather difficult to find so I make my own. Just peel and cut the pumpkin, place in a large pan, boil for about 20 minutes, drain and mash. Super easy! Anyone can do it!

It's a super easy recipe to follow and I'm sure your children will enjoy helping you make them! Who doesn't love rolling out dough and cutting the cookies out!


You can make them any shape. The recipe makes 20, great for a party!


Ingredients


½ Cup Pumpkin Puree

1 Cup Golden Caster Sugar

¼ Cup Vegetable Oil

½ tsp Vanilla Essence

2 Cups Plain Flour

½ tsp Ground Cinnamon

½ tsp Ground Ginger

½ tsp Ground Nutmeg

½ tsp Baking Powder


½ Cup Chocolate Chips (Optional)


Method


* Preheat the oven 180C


* Line a baking tray


* In a medium bowl, cream together, the pumpkin puree, sugar, oil and vanilla.


* Sift in the spices and baking powder.


* Sift the flour in ½ a cup at a time.


* Mix in the chocolate chips if adding.


* Measure out the cookies, using a tbsp, and roll each one into a ball.


* Place on the baking tray about 2” apart.


* Using a small piece of baking parchment, place it over the top of each ball and flatten gently with a cup.


* Bake for 8-10 minutes.


Serve
