Vegan Pumpkin Risotto

You can't go wrong with this vegan pumpkin risotto!


Who doesn't like risotto? You wont be dissapointed trying this recipe!


This is the perfect dinner to serve this month and your guests are sure to be impressed!


This recipe requires pumpkin puree. I have found this to be a difficult thing to find so I make my own.


To make pumpkin puree;

Peel the pumpkin, boil for 20 minutes, drain and mash.

It's very simple and probably cheaper to make yourself.


This recipe is very easy to follow.


I hope you like this recipe as much as we do!

Ingredients


1 Cup Pumpkin Puree

1 tbsp Olive Oil

1 Onion - Diced

1 Cup Arborio Rice

¼ Cup Rice Vinegar or White Wine

3 ½ Cup Vegetable stock

¼ Cup Nutritional Yeast

½ small pumpkin - Diced, cut into small chunks and roasted


Method


* In a large frying pan heat the pol


* Add the onion and cook for 2-3 minutes


* Add the rice and stir for 1 minute.


* Mix in the vinegar and cook until mostly dry.


* Stir in 1 Cup of vegetable stock. Leave until mostly dry, stirring occasionally.


* Repeat this process with the vegetable stock until it’s all been used.


* Stir in the pumpkin puree, yeast, salt and roast pumpkin.


* Cook for a further 5-10 minutes or until the rice is cooked.


Serve
