Finding breakfast ideas for a 1 year old can be rather challenging. Maxine needs options so she doesn't get bored else she wont eat, i'm sure it's the same with most babies!
It took a long time to figure this recipe out but vegan quinoa bagels are one of my daughters favourite breakfast and lunch time meals.
You can top them with anything you would like!
My husbands favourite thing is peanut butter and banana, I like cream cheese and blueberries and Maxine loves cream cheese and cucumber.
This recipe makes 5.
Ingredients
1 Cup Uncooked Quinoa
½ Cup Milk - I use oat milk but any milk of your choice would work.
1 tsp Baking Powder
¾ tsp Salt
Toppings of your choice.
Method
* Preheat the oven 210C
* Line 2 large trays with baking parchment.
* (Optional) Draw templates of your bagel on the parchment. Keep the pen on the side you don’t put the mix onto. I have made the mistake of putting the mix on the side we drew on, when I took the bagels off the pen was transferred onto it. Luckily it was one of my trials.
The outline needs to be the exact shape and size you would like your bagels as they do not expand in the oven. I tried this recipe so many times trying to make the bagels expand and unfortunately if you want the taste, they wont expand.
* Rinse the Quinoa under running water for 2 minutes.
* Shake any excess water out.
* In a food processor or blender bowl add the quinoa, milk, salt and baking powder.
* Blend until the batter is smooth.
* Pipe the mix onto your stencils.
* Bake in the oven for 9 minutes.
* Flip the bagels over.
* Cook for a further 3 minutes. This will crisp them up nicely.
* Let cool before you add your toppings.
