Vegan Red Pepper Salsa

This Red Pepper Salsa is a great variation on the classic salsa mix and is a must for the summer season! It is healthy and full of flavour.


I made this recipe as I did not have the onions or fresh herbs required for the classic salsa recipe. I searched for an appropriate alternative until I came across this idea. The fresh and delicious flavours made it the perfect choice.


It was so quick to make. If you roast the peppers in advance it only takes 5 minutes to cut all the ingredients and mix them up. With only an additional 20 minutes to roast the peppers.


I chose to roast the peppers beforehand as I personally love the flavour of roasted peppers. But this is completely optional. For a crunchier texture, raw peppers work well.


I am not a huge fan of hot chilli, but I did add ¼ tsp of chilli flakes for this recipe. It was just the little kick it needed! Not enough to burn your mouth but enough to taste, which went well with all the other flavours in this dip.


We had this salsa for dinner with homemade cheesy tortillas, which went together perfectly. Alternatively, this would be the perfect side for a summer’s BBQ.

Make use of the leftovers by spreading some in a cheese sandwich. I used the left overs in a salad for my lunch the next day.


If you leave it covered and in the fridge, this salsa will last up to 5 days.


Quick tip:

This is definitely more of a chunky recipe, so for more of a saucy dip, try blending half of the ingredients, then mix this with the other half for a thick saucy dip.

Red Pepper Salsa - Makes 1 Small Bowl


Ingredients


½ Cup Cherry Tomatoes, Diced

1 Medium Red Pepper

1 Small Garlic Clove, Diced

¼ tsp Chilli Flake

¼ tsp Balsamic Vinegar

¼ tsp Dried Basil


Method


Preheat the oven to 180c.


Roast the red peppers for 20 minutes.


When the peppers have roasted, let them cool.


Prepare all the other ingredients while you wait for the peppers to cool.


Combine all ingredients in a bowl.


Serve


Enjoy!
