Vegan Rice Krispie Christmas Puddings

This recipe is one that Katie made for us a few years ago. We loved it so much that we had to turn it vegan and make it for all of you!


These vegan rice krispie christmas puddings are so impressive! With such a simple recipe but amazing results, you are sure to impress whoever you make them for!


This is a great recipe to make with your children! It's melting things, getting your hands a little dirty and they will definitely be excited to see the results!


The recipe makes 6 mini christmas puddings. I think they are the perfect size for a party or get together!

Christmas is my favourite time of year, I hope this reflects in the recipes we have made this month!

We have enjoyed making all these Christmas recipes! These are no different! I love making exciting and amazing looking things for everyone!

We try our recipes out on the whole family and sometimes my husbands work colleagues too. This way we can make sure they are up to snuff for all of you!


Cooking is something I have always enjoyed! I never wanted to be a chef and ruin my love by it becoming a stressful job.

This blog is my way of doing what I love, without it being stressful! I just hope that it helps people to be inspired!

Ingredients


20g Milk chocolate

1 cup Marshmallows - Make sure these are vegan. We bought Mini Marshmallows from Morrisons.

1 Cup Rice Krispies

1 tsp Butter - We use Pure but any plant based butter will work.

50g White chocolate

Decorative holly leaves - You can buy these in Asda. I'm sure you can find them in other supermarkets too.


Method


* Melt the milk chocolate


* Melt the marshmallows and butter in a small saucepan.


* Add the melted milk chocolate to the marshmallows.


* Mix in the rice krispies, make sure they are all covered.


* Once cooled enough to touch, Roll the rice krispie mix into balls.


* Melt the white chocolate and spread over the top - You can use a piping bag if you want.


* Add your holly leaves on the top.


* Place in the fridge for 1-2 hours or until completely set.
