This was my first attempt at making Vegan Ring Donuts, and it went fantastically! Not all the donuts were perfectly round or the same size or colour, but they were all soft and doughy and tasted great. I am very happy with the way they came out. These are an easy and tasty treat for the whole family.
This recipe made about 10 donuts. Between the two of us, we managed to eat them all in one day. They are so tasty, you just want more. Make sure to keep the donuts covered and they will last between 3 and 5 days.
This is a great recipe to make while in isolation, as the ingredients are all pretty basic and inexpensive. If you have some icing or chocolate spare you could try drizzling it over the donuts to add a little extra flavour.
When you make the dough for the donuts, the mixture will be very sticky. I found it best to rub a little flour over my hands to stop the dough from sticking to me, this also made it a lot easier to shape the dough. Along with this, make sure you have flour on your thumb when you make the hole in the middle.
To cook these donuts the oil will need to be hot, so make sure you are being careful around it! I manage to splash a perfect circle on the side of my hand. This was because the dough stuck to the spatula that I was using to put them in the oil and I ended up just dropping the donut into the oil. You will want to try and slide the donut off the spatula into the oil to avoid splashing. It was helpful for me to put some flour on the spatula to help the donut slide smoothly off the end.
You’ll need to make sure to keep and eye on your donuts while they are in the oil, it is very easy to overcook them. They should only take around 2 minutes to cook on either side, however if you notice they are too pale or too dark after this time, make the appropriate changes to your cooking time.

Ring Donuts - Makes 10
Ingredients:
¼ Cup Vegan Butter
½ Cup Vegan Milk
2 tbsp Oil + extra for frying
2 Cups Plain Flour
½ Cup Caster Sugar
1 tsp Baking Powder
Method
Melt butter over medium heat.
Add the oil and milk to the mix.
Once combined, remove from heat and set aside.
In a separate bowl, combine flour, baking powder and ¼ cup sugar.
Add the butter and milk mix to the dry mix.
Combine until it forms a thick dough.
Using your hands, roll the dough into small balls. Put flour on your hands to stop the dough from sticking.
Use your thumb to make a hole through the middle of the dough. Make sure there is flour over your thumb to stop it sticking.
In a frying pan, heat oil on medium heat.
When hot, use a spatula to drop the donuts into the oil.
Fry the donuts for around 2-3 minutes each side.
Put the donuts on a tea towel or some kitchen roll to soak up the excess oil.
Roll the donuts in the remaining ¼ cup of sugar.
Serve
