Vegan Rocky Road

We took these Vegan Rocky Road bars on a picnic, it made a perfect dessert! It was a very sunny day so the chocolate started to melt but it did make them easier to eat and Maxine loves anything messy.

This recipe is super quick to make and makes amazing results! My little girl loves them!


Your children will love to make these with you! And it’s a good way of tricking your children into eating fruit and nuts!


You can change the fruit and nuts in this recipe, I love the combination I used but it'll taste way better if you are using your favourites!


I would love to see what fruit and nuts you all choose to use for these! I hope you like them as much as we did!


Ingredients


400g Chocolate - of your choice I used Tescos own brand Nomo

80g Butter I use Pure but you can use any butter that you would like

1 tbsp Golden Syrup

80g Marshmallows

80g Dried cranberries

80g Pistachio nuts

120g Moo Free Cinder Toffee Chocolate or honeycomb of your choice.


Method


* Line a loaf tin with baking parchment. You can use a different sized tin but I find a loaf tin creates the best results for size and thickness.


* Melt the chocolate, butter and syrup in a glass bowl, over a saucepan and boiling water.


* Stir in the marshmallows, cranberries, pistachios and moo free chocolate.


* Transfer the mix to your prepared tin.


* Place in the fridge for 3 hours or until set.


Serve
