Why not treat yourself this week? This vegan Sea Salt & Pepper Focaccia is the perfect way to treat yourself and your family!
It's easy to make this and it's fun! I love making focaccias, and I love eating them even more!
This recipe makes 2 quite large focaccias. They are about the size of a normal loaf of bread that you would buy from the shop.
You start this recipe by mixing yeast, warm water and sugar. You let this sit for for 10 minutes to make a mix similar to what you can see in the picture.
It's important that you use warm water because it helps to activate the yeast.
If you don't get a frothy mixture you can't be sure your yeast will rise so you need to try again.
This is what your dough should look like when you put it in the bowl to rise. You can see that it is smooth and stretchy.
You need to be set it in a warm place to let the dough rise.
This is what your dough will look like once it's risen, minus the fingers marks hopefully.
You don't want to knock the air out of the dough so you need to be very careful with it.
I let my dough rise in the living room, we have big double doors and it lets in so much heat from the sun.
Unfortunately, just before the rise was over Maxine slipped and fell into the dough.
It's so simple after this, you cut the dough in half and gently shape it. Dont' forget to poke the wholes in dough.

It's super tasty and so fun to make! It's a really great recipe to make!
These go really well on the side of most meals! We have enjoyed ours with potato stir fry, pasta and our favourite has been salad. It's a great thing to add!

Salt & Pepper Focaccia
Ingredients
1 ⅓ Cup Warm Water
2 tsp Caster Sugar
2 ¼ tsp Dried Active Yeast
3 ¾ Cup Plain Flour
2 tsp Salt
2 tsp Pepper
You could add some chilli if you like it.
¼ tsp + 2 tbsp Olive Oil
Method
In a small bowl mix the warm water, yeast and sugar. Let sit for 10 minutes. You want to see a frothy mix to know that the yeast is active. If you don't get this you should start again.
In a large bowl sift the flour.
Add 1 tsp salt and pepper. Mix to combine.
Pour in the oil and yeast mix.
Mix with a fork until it starts to become a dough then knead with your hands till you have a smooth ball.
Spread 2 tbsp oil in a clean, large, bowl.
Add the dough, cover with a clean tea towel and let rise in a warm place for 1-1 ½ hours or until doubled in size.
Preheat the oven 200C
Gently tip the dough onto a floured surface.
Cut into 2 halves.
Shape both pieces into an oval or whichever shape you would like.
Transfer them to a large baking tray.
Use your fingers to create holes in the dough.
Sprinkle half a tsp of each salt and pepper over each loaf.
Bake for 20-25 minutes.
Serve
