As many of you will know, it can be very difficult to find impressive vegan mains, especially when you have a roast.
I'm not a huge fan of nut roast either so I'm always striving for new dishes!
This vegan seed & carrot loaf is impressive and super easy to make! It's the perfect main for a roast dinner and tastes great with some gravy!
I, of course, tested it with my family! Everyone loved it and my brother, who is a vegan, was very chuffed with it.
This recipe is quick and easy to make so you can whip it up if you have surprise guests.
I hope you like this recipe as much as we do!
Ingredients
4 Large Carrots
150g Sunflower Seeds
150g Pumpkin Seeds
2 Garlic Cloves
1 tbsp Rosemary
1 tbsp Parsley
1 tsp Salt
Method
* Peel the carrots.
* Cut into small pieces.
* Boil the carrots for 20-25 minutes.
* Drain the carrots and then mash them.
* Preheat oven 200C
* Line a loaf tin.
* Place the seeds into a food processor.
* Blend the seeds into a powder.
* Mince the garlic.
* Mix all the ingredients together.
* Firmly press the mix into a loaf tin.
* Bake for 45 minutes.
Serve
