Vegan Sheperd's Pie

Yesterday the weather had gotten quite chilly so we wanted to have some colder day ecipes ready for you all. This vegan Shepherd's Pie is perfect for the whole family! It only takes about 40 minutes to make and serves 4. If you want to serve 6 I recommend serving with garlic bread.


The vegetables you choose to use are up to you. The ones I use are my favourite for this kind of recipe. However, plenty of other ingredients also go well. I have used courgette and/or broccoli for this recipe as well.


This makes this recipe a great one if you have some vegetables that need using up. Any vegetable will go in, so you can't go wrong!


Personally, I love adding herbs to my recipes, and we have found that rosemary goes perfectly in this dish! But if you aren't a fan of herbs, it is still delicious if you leave them out.

You could also try basil or any other herb that you like.


Traditionally a Shepherd's pie is made with minced meat. Why not try this meal with out mince meat alterntative if you prefer a meat replacement in your meal but it isn't essential for the meal.


This recipe is a great one to make in the morning, or the night before, so it is ready for dinner in the evening. We often make meals like that in our family, if we know we are going to be out most of the day or are having a very hectic and tiring day it's nice not to have to cook dinner in the evening. This is when many people get takeaway but if you already have a tasty, healthy meal already cooked it saves time and money.


I apologise, I haven't done the nutritional information for this like I usually would. With the sun shining I have been trying to enjoy some time with my daughter, but I wanted to get a recipe up for you guys quickly.

I am aiming to eventually get it up but while the sun is shining and I have the time to spend with Maxine I would like to take advantage of it.


I'm still working on my vegan nutritionist course, I was flying through it but I now have Joss home all the time and I'm getting more recipes up as well as spending time in the sunshine so it's a slow process at the moment.

I would highly recommend trying it if you are interested in it, it is so intersting and I am really enjoying it!

Vegan Shepard's Pie - Serve 4 Generously


Ingredients:


6 medium Potatoes

5 medium carrots

1 pepper (colour of choice)

1 large onion (colour of choice)

1 ½ cup hot water

1 veggie oxo cube

1 tin chopped tomatoes

½ tsp ground pepper

1 tsp rosemary (optional)

1 tbsp vegan butter - I use Flora but any plant based milk will work

1 cup grated vegan cheese - We like violife but you can use which ever plant based cheese you like.


Method


Preheat the oven to 180c.


Peel potatoes and cut them in half.


Put them in a pot to boil for about 20 mins.


While the potatoes boil, peel and cut your vegetables. You want to cut them to 1-2cm sized pieces


Put onions in a large frying pan on medium heat. Fry for around 1-2 mins. They will become fragrant.


Put carrots in the pan and fry for another 1-2 minutes.


Mix the oxo cube with the hot water and then add it to the frying pan.


Add the tinned tomatoes.


Simmer for 1 minute.


Add the peppers.


Simmer for another 2-3 minutes.


Add the peppers and rosemary (if using) and leave to simmer while you prepare the potatoes.


Strain the potatoes.


Put them back into the pot they were boiled in and add the butter.


Mash until smooth.


Now pour the veg mix from the frying pan into an oven dish and put the mashed potatoes on top.


Sprinkle the cheese on top.


Put this in the oven for 10-20 minutes, depending on how much you want the cheese to brown.


Serve
