Vegan Spaghetti Bolognese

I'm very hopeful that the sun will stay out the whole time we are in lockdown, however, just incase it doesn't I want to provide you with a few colder day recipes.

Those recipes that are a great way to end the day and they really warm you up! This vegan spaghetti bolognese is a great example of that! It's such a great winter recipe, it warms you up while you eat it and it's a feel good meal!


This recipe is so quick and easy to make! It's a great one to use your left over vegetables in; If I have some broccoli or green beans that are starting to look a little old and I'm making a spag bol I will add them in. I think most vegetables go well in this meal, it's not traditional but I like it.


Traditional spaghetti bolgonese sauce takes 4 hours to make, people say leaving it for 4 hours makes the sauce richer and therefore better. It also has white wine, milk and beef stock. There is no herbs used just salt and pepper.

The only vegetables they use in a traditional bolognese are onions and peppers, sometimes they will use carrot and celery.


So as you can see this spaghetti bolognese is nowhere near a traditional one but I love it all the same. It's super healthy, lots of vegetables and textures and just over all so tasty!


I'm sure that a traditional one tastes amazing too and, I hope to one day visit Italy and find out, however i try and eat lots of vegetables and make some pretty quick meals.


Joss' brothers family have a fun game they play everytime they eat spaghetti, they call it messy spaghetti. The aim of the game is to see who can get the messiest, they take a long piece of spaghetti and try and suck it up in one go while everyone else cheers for them. The kids enjoy this game so much that they don't even notice they are eating the vegatables and getting all that goodness!

When we had dinner with them and they played this game Joss and I were cracked up laughing, it was so much fun and everyone was happy and cheering, it was really great to see!

This is a great game to play with your children if they are fussy eaters, they will eat all their dinner up and not even notice they've eaten their vegetables!


When Maxine is teething she goes through stages where she only wants pasta, so this vegan spaghetti bolognese is a great way to make sure she is eating healthily. We mix the vegetables with the spaghetti and while she thinks she's only eating pasta we know she's getting the healthy vegetable that she needs.

Spaghetti Bolognese - Serves 8


Ingredients


2 Cups Vegan Mince “Meat” - See recipe

1 Broccoli - Cut into small florets

1 tin Chickpeas - Drained & Rinsed

3 Large Carrots - Peeled and cut into 1cm size pieces

2 Cups Cherry Tomatoes (roughly ½ a small punnet)

1 Tin Chopped Tomatoes

1 Pepper - Cut into 1cm size pieces

2-3 gloves Garlic - Minced

1 Onion - Diced

1 tbsp Vegetable Oil


Spaghetti to serve


Method


Heat the vegetable oil in a large frying pan, add the carrots and cook for 3-4 minutes or until the carrots start to soften.


Add the pepper, onion, garlic and broccoli and cook for another 1-2 minutes.


Add the vegan mince, chickpeas, chopped tomatoes and cherry tomoatoes. Simmer for roughy 15 minutes or until your spaghetti has cooked.


Serve with spaghetti or pasta.


Enjoy!
