This Vegan Spicy Broccoli and Cannellini Bean Soup is a very healthy and delicious meal. This is a perfect recipe on warm spring/summer days and is perfect for lunch or dinner. Crusty homemade bread is perfect served with this soup.


Each of the ingredients of this meal is filled with great healthy benefits and is great if you are looking for a bit of a health kick. The different flavours blend beautifully together, and the chilli gives it a great extra element. If chilli isn’t your thing just leave it out of the recipe.


This recipe makes enough for 2-3 servings and is a pretty easy recipe; it only requires one saucepan. It takes about 20-30 minutes to make. You can store your leftovers in the fridge for up to 3 days and is easy to reheat whenever you are ready for it.

Broccoli

Broccoli is paced with vitamins, fiber, minerals and antioxidants.

Broccoli could reduce inflammation, protect against certain types of cancer and may aid in blood sugar control.


Cannellini Beans

Cannellini beans contain lots of fiber, vitamins and protein.

Cannelini beans could lower blood sugar, lower blood pressure, fight cell damage and inflamation and balance fluids in the body.

Spicy Broccoli & Cannellini Bean Soup - Serves 2-3


Ingredients


600ml Water

1 Large Broccoli, cut into florets

2 Handful Spinach

400g Cannellini Beans, drained and rinsed

4 Garlic Cloves, diced

1 tbsp Fresh Lemon Juice

1 tsp Oil

Ground Pepper

1 tsp Chilli Flakes


Method


In a large saucepan, warm the oil on medium heat.


Add the garlic and ground pepper and stir until softened.


Add the broccoli florets and 3-4 tbsp of the water and cook until softened (about 5-10 minutes).


Add the rest of the ingredients and bring to a boil.


Bring the heat down and simmer for 10 minutes.


Remove the pot from the heat and let cool slightly.


Using a hand blender, blend all the ingredients until smooth.


Add the chilli flakes to taste.


Serve
