Vegan Spicy Pepper & Cucumber Relish

This spicy pepper and cucumber relish is delicious, especially for anyone who likes a bit of spice in their meal!


This relish goes perfectly on a burger, with chips or in a salad. It takes a while to make this recipe as you will need to soak the vegetables for at least 8 hours. But this works perfectly if you have it planned for a dinner or barbecue, as you can make it in advance.

I love the flavour of the cucumber mixed with the pepper. Before making this recipe I was skeptical about the cucumber flavour being noticable, but it is a great addition to this recipe.


For anyone who doesn't like a lot of spice in there relish half the amount of chilli flakes to keep the taste but lessen the spice.


Bell Peppers;

Bell peppers are packed with vitamins and low in calories.

They are a great source of vitamin A, vitamin C, iron and potassium.

Bell Peppers may help lower risk of visual impairment.


Cucumbers;

Though cucumbers are often thought of as a vegetable they are actually a fruit.


Cucumbers are high in nutrients , antioxidants, minerals and vitamins.

They are great for hydration and aiding in weight loss; cucumbers are low in calories & contain a good amount of water and soluble fiber.

Cucumbers may help lower blood sugar.

Spicy Pepper & Cucumber Relish


Ingredients


150g Brown Sugar

150ml Apple Cider Vinegar

1 Medium Red Onion, Diced

1 Cucumber, Diced

1 Red Pepper, Diced

2 Garlic Cloves, Diced

1 tsp Chilli Flakes

½ tsp Paprika

¼ tsp Turmeric

2 tbsp Cornflour + 2 tbsp water

4 tsp Sea Salt


Method


Place the cucumber, pepper and garlic in a bowl.


Add the salt and 250ml of water and leave overnight, or for 8 hours.


Drain the vegetables well and place in a large pan with vinegar, brown sugar and spices.


Simmer for 10-15 minutes until vegetables have softened.


Mix the cornflour and water in a separate bowl and then pour into the pan.


Stir until mixture has thickened.


Transfer the relish into a hot, sterilised jar and seal. Allow to cool.


Serve
