Vegan Stained Glass Biscuits

Are you looking for the perfect thing to do with your children? For something amazing to hang on the tree? And something that will definitely impress at a party?


Look no further!


These Vegan Stained Glass Biscuits are the perfect thing for you to make! They look awesome and they taste even better!


These biscuits are made using a Jamie Oliver recipe and turning it vegan. It makes 9 Large biscuits and 9 smaller ones, which are the bits you cut out of the middle of the larger ones.


I think it looks great with the large, stained glass biscuits on the tree, and the smaller ones hanging in between! You can snaz the little ones up a little by decorating them with royal icing if you'd like. I'm sure you and your children will enjoy decorating them together!


Royal Icing;

1 Cup Icing Sugar

1-2 tsp Water

1/2-1 tsp Vanilla Essence


Sift the icing sugar into a bowl.

Add the water and mix together.

Once it's the right consistancy, add the vanilla.

Add colour if you are choosing to.


You want the icing to be a little thicker so it doesn't drip straight off the biscuits.


We used to make these every year with my parents. We started it because we were making presents for my grandparents and we enjoyed making them so much that it became a tradition!

Of course I had to pass the tradition onto my daughter! I can't wait till she is old enough to really join in and make them! I know she will love it as much as I do!

I find these biscuits so much fun to make, Maxine enjoyed helping, when she was allowed. She LOVED eating them and hanging them on the Christmas tree!


The recipe is super easy to follow, it's nice and simple but creates amazing results!

Ingredients


1 Clementine - You need the zest.

100g Butter - We use Pure but any plant based milk will work

180g Plain Flour

50g Caster Sugar

½ tsp Cinnamon

1 tbsp Milk - We use Oat milk but any plant based milk will work

12 Vegan coloured fruit boiled sweets.


Method


* Zest the clementine into a large bowl.


* Place the butter and sugar in the same mixing bowl.


* Sift the flour and cinnamon into the bowl.


* Rub together with your fingertips to create breadcrumbs.


* Add the milk to create your dough.


* Knead the dough into a ball, wrap in cling film and place in the fridge for 30 minutes.


* Seperate your sweets into colours - roughly 3 sweets for each colour. This means you have 4 colours. You can adjust this if you would like to.


* Preheat the oven 180C


* Line 2 baking trays with baking parchment.


* Roll the dough to roughly 1cm thick.


* Cut out large shapes


* Cut out smaller shapes in the middle of your bigger ones. This will be where your boiled sweets go.


* Place them on your baking tray. Place all the biscuits on the tray, including the little shapes you cut out of the middle. These also make good biscuits to hang from the tree. You can decorate these ones with royal icing if you wish to.


* Use a straw to make holes in the top of all your biscuits - this is for your ribbon.


* Fill the holes in the middle of your large biscuits with your sweets. Don't get the sweets in the little holes at the top, otherwise, you wont be able to get the ribbon through it to hang on the tree.


* Bake for 10-12 minutes.


* Once completely cooled tie your ribbon, using the top hole, hang on your Christmas tree.
