
These Vegan Strawberry and Lemon Shortbreads are the perfect biscuit for summer. The combination of strawberries and lemon is very refreshing which is great to be enjoyed in the sunshine.
This recipe makes around 9-12 rectangular biscuits. Alternatively you can use a round biscuit cutter to make different shaped shortbread biscuits. Double the ingredients for even more delicious biscuits.
Marisa loved to make different shaped, small biscuits for Maxine and they play name the shape with them. This is a great, fun way to learn for Maxine!
If you make smaller shapes, remember the cooking time may be less so check them earlier on.
Shortbread is one of my go to easy recipes. You can make them plain or flavoured. They are perfect to make for your kids or your family and friends.

This shortbread is a great treat to take on a picnic or just a walk, for a snack on the go.
This is a great recipe to let your kids help with, it's super easy and they'll love cutting the biscuits out, I know we did when we were little!
If you don't like strawberries you can easily swap them out for raspberries or a different fruit you enjoy.
You could easily put some chocolate chips in the shortbread.

Strawberry & Lemon Shortbread - Makes 9-12
Ingredients
¾ Cup Vegan Butter - We use Pure of Flora but you can use any plant based butter.
1 tsp Vanilla - You can use vanilla extract or essence.
½ Cup Caster Sugar
1 ¼ Cup Plain Flour
¼ Cup Strawberries, cubed
1-2 tbsp Lemon Zest
Method
Preheat the oven to 180c.
Cream together the butter, vanilla and sugar.
Mix in the flour, strawberries and lemon zest to create a dough. Put the dough in the fridge for 30 minutes if it is too soft.
Roll the dough onto a lined baking tray. If you want circular biscuits, roll the dough out on a well floured surface and use a cutter to make the shapes desired. Then transfer the biscuits onto the oven tray.
Bake for 20-25 minutes.
Let cool before cutting into slices.
Serve
