Vegan Stuffed Pepper Lanterns

With Halloween fast approaching it's time for us to start investigating some delicious recipes for your parties!


This vegan stuffed pepper lantern recipe is sure to impress everyone who sees or tries them!

They are super tasty and lots of fun to make!

Your children will love to help you with these ones! Especially decorating the faces on the peppers.

This recipe makes 6 lanterns and is very simple to follow. You'll be so happy you tried it!

Ingredients


1 Cup of Dried Lentils - Cooked

7 Bell Peppers - 1 of these peppers will go in the mix and the rest will be your lanterns.

1 tsp Vegetable Oil

3 Cloves Garlic - Minced

1 Onion - Finely Chopped

1 Medium courgette - Diced

1 Cup Sweetcorn

1 Medium Tomato - Seeds removed. Tomato Diced

1 tsp Fennel Seeds

1 tbsp Sage

1 tsp Paprika

Salt to taste

1 tsp Pepper


Method


* Remove the seeds from 1 pepper. Dice and set aside for the filling.


* Cut the top from the rest of the peppers & remove the seeds.


* Cut out eyes and mouth shapes in your peppers.


* Preheat the oven 180C


* Heat the oil in a large frying pan.


* Cook the onions and diced pepper for 5 minutes.


* Add the courgette and cook for a further 4 minutes.


* Mix in the tomato and sweetcorn. Cook for 3 minutes.


* Stir in the remaining ingredients.


* Spoon the filling into the peppers.


* Place the lids on the peppers


* Cook for 25 minutes.


Serve
