Vegan Summer Fruits Crumble

Summer doesn't have to be over just yet! Why not try this incredibly tasty vegan summer fruits crumble!


I can not reccomend this crumble enough! It is so delicious!


To make this I adjusted a recipe from Kathie Webber's all star cookery recipe club.

My dad bought a set of her recipes at a car boot sale years ago and we have used them for a long time, we love them!


When I went vegan I decided to adjust some of her recipes to make them vegan too. I am very excited to share them with you as I do them!

This recipe is very simple to follow and definitely worth making!


You can change the fruit in this recipe to be anything that you like.


I hope you like this recipe as much as we do!

Ingredients


100g Plain Flour

50g Butter - We use Pure but any plant based butter will work.

50g Caster sugar + 2 handfuls

Vanilla Essence - To taste

420g-500g Frozen Summer Fruit Mix - You want the fruit to be frozen because it defrosts as it cooks and it keeps the fruit from turning to mush.


Method


* Preheat the oven 200C


* Sift the flour into a small bowl.


* Add the butter and rub between your fingertips to make a breadcrumb mixture.


* Mix in 50g Caster Sugar.


* In your oven dish, mix the frozen fruit, vanilla essence and 2 handfuls of caster sugar.


* Pour the crumble mix over the top, evenly.


* Bake for 35-40 minutes or until the crumble is golden brown.


Serve
