Vegan Sweet Potato Biscuits

If you have seen my last 2 recipes, you will know I have been trying to find healthy treats that my toddler will eat while she's teething. These vegan sweet potato biscuits are perfect! My daughter loves these, they make a great snack or a great lunch with a bit of salad!


They have sweet potato which is a super food, so I know that Maxine is getting some goodness!


Sweet Potato

#Sweetpotato is a sweet, startchy root vegetable that is grown worldwide.

It comes in different colours. You can get orange, white and purple coloured sweet potato.


Sweet potatoes are rich in vitamins, minerals, antioxidants and fiber.

They are very good for you if you want healthy vision; they are incredibly rich in beta-cartere which is converted, in your body, into Vitamin A. Our body uses Vitamin A to form light-detecting receptors inside your eyes.


1 Cup of Sweet potatos has;

Calories: 18

Carbs: 41.4g

Protein: 4g

Fat: 0.3g

Fiber: 6.6g

Vitamin A: 796% Recommended daily intake (RDI)

Vitamin C: 65% RDI

Magnese: 50% RDI

Vitamin B6: 29% RDI

Potassium: 27% RDI

Copper: 16% RDI

Niacin: 15%


This recipe is super easy to follow and only takes a few minutes. You could easily whip this recipe up in the morning for your children's snack or lunch. It's good hot or cold!


It's easy enough to make that you could let you children make them or help you make them. I'm sure they would enjoy it!


You can make 10 with this recipe so plenty to share with the whole family, friends or anyone coming over! They are sure to impress!

Or you can keep them in an airtight container for up to 3 days.

Vegan Sweet Potato Biscuits - Makes 10


Ingredients


2 ½ Cups Plain Flour

3 tbsp Granulated Sugar

2 tbsp Baking Powder

½ tsp Bicarbonate of Soda

1 tsp Salt

½ tsp Cinnamon (optional)My dad really liked the cinnamon, however my mum and husband didn't like it with it.

â…” Cup Vegetable Oil

1 Cup Sweet Potatoes - Cooked & Mashed

¼ Cup Milk - I use Oat milk but any plant based milk will work.


Method


* If you haven’t already done so, cook and mash your sweet potatoes


* Preheat the oven 220C and Line a baking tray with baking parchment.


* Combine all the dry ingredients in a large bowl.


* Add the sweet potato and mix in with a fork. This helps to break it up a little and spread it more easily.


* Add the oil and the milk.


* Mix together to become a dough.


* Scoop ¼ cup and place on the baking tray.


* Bake for 10-15 minutes or until a toothpick can come out clean.


Serve
