Vegan Sweetcorn & Courgette Fritters

This recipe was sent to me by Katie, who had tried it herself and loved it. So of course I had to try these vegan sweetcorn & courgette fritters.

These are small, healthy finger foods. Which, if like us, you are trying to persuade your toddler to eat, really helps!


These make a great main for a meal, with a side salad and/or chips. You can't go wrong!


These are so easy to make and super quick! Perfect for a quick dinner but still healthy.

Ingredients


198g Tin Sweetcorn - Drained

2 Spring onions - Sliced

½ Courgette - Grated

1 tsp Smoked Paprika

50g Self raising flour

40ml Milk

1 tbsp Veg oil

Salt & Pepper - To taste


Method


* In a medium bowl mix all the ingredients except the oil.


* Set aside


* Heat the oil in a large pan


* Use a dinner spoon to scoop in large mounds of mix. Flatten the mix down with the spoon.


* Cook for 2-3 minutes, flip and repeat. The mix should brown.


Serve
