Vegan Taco Pasta Bake

With the weather getting colder again, we've been looking for some super tasty and warm dishes. This vegan taco pasta bake is the perfect, feel good meal for the whole family to enjoy!


It's super easy to make and it's the perfect comfort food!


This taco pasta bake serves 4 generously. You could serve 6 and maybe pair it with some bread. Check out our bread page here to see what to pair it with.


It only takes about 20 minutes to prep this meal and then once it's in the oven it takes another 30-35 minutes.


It's a great recipe to make in the morning and have ready to re heat in the evening after a long day. Just keep it in the fridge until you reheat it. Perfect for an on the go family!

To make this recipe you first need our salsa and guacamole recipes.


Cook your pasta until it's al dente. You can use any pasta you like but my favourite for a pasta bake is rigatoni.


Fry the onion, peppers, jalapeno and taco or fajita seasoning until the peppers are soft.


You can use either taco or fajita seasoning. I used fajita because that's what I had. Both will go perfectly.

You can buy this at the shop or find easy to make recipes online.


Add the salsa, vegetable stock and cream cheese and mix to combine.


Add the pasta and mix to completely combine.

Pour this mix into your baking tray.


You can spread your guacamole over the top here or if some of your family don't like avacados enjoy it as a side dish.


Spread your grated cheese over the top and bake for 30-35 minutes or until the pasta is fully cooked and the cheese is melted.


Serve and Enjoy!

Taco Pasta Bake


Ingredients


Guacamole - Our recipe is here.


3 Cups Pasta -You can use any type of pasta but my favourite for pasta bake is rigatoni

2 tbsp Olive Oil

½ Red Onion - Diced

1 Green Pepper - Diced

1 Red Pepper - Diced

1 Jalapeno - Optional

Taco or Fajita Seasoning - You can use either, both of them will go perfectly. I used fajita seasoning because that's what I had.

1 Cup Vegetable Stock

4 tbsp Cream Cheese

2 Cups Grated Cheese


Method


Cook your pasta until al dente and drain it.


Preheat the oven 180C


Heat the olive oil in a large frying pan.


Add the red onion, peppers, jalapeno and taco seasoning for 3-5 minutes or until the peppers are soft.


Add the salsa, vegetable stock and cream cheese.


Mix until combined.


Stir in the cooked pasta. Mix until combined.


Transfer the mix into a large baking tray. Roughly 26x26cm


You can add your guacamole over the top here, or leave it for the side.


Spread your grated cheese over the top of the dish.


Bake for 30-35 minutes or until the pasta is completely cooked and the cheese is melted.


Serve
