Vegan Taquitos


Taquitos are a Mexican dish, typically made by rolling filling in a small tortilla. Traditionally taquitos are made by deep frying them, however we baked our vegan taquitos in the oven to crisp them up.


I had never had taquitos until I made them; I based them from a few recipes I had seen and then created my own, so I hope they came out correctly!


I think they tasted amazing! I had to stop myself from eating the whole lot in one go. I enjoyed them for lunch the next day as well.


These are super easy to make, this recipe makes 7 taquitos so enough for the whole family to enjoy!


I used corn tortillas for this recipe but why not try our homemade tortillas.

To make these vegan taquitos you first need to boil the potatoes.


Once they are soft enough you need to drain and mash them.


Add your grated cheese and then set aside.

Heat the oil in a large frying pan.


Saute your onions for 2-3 minutes, until they are fragrant.


Add the garlic, carrots and all the spices into your pan. Fry for a few minutes, giving your spices time to mix with your vegetables.


Add the vegetable stock and cook until your carrots are almost cooked.


Add your peas, place the lid on your frying pan and cook until your carrots have completely cooked.

Add your mix, from the frying pan, into your mash potato. Mix to combine.


If you would like a smoother texture in your taquitos you can mash your vegetable mix as well.

Place a little of your mix onto each of your tortillas. You want to place the mix to the side, like in the picture, to make rolling easier.


Roll your tortilla up, you want it to be tight so the filling wont fall out, also when you cook them they will cook together, making it so the tortilla keeps it's shape.

Place your tortillas on a baking tray.


Bake for 17-20 minutes or until the the tortillas are brown and crispy.

Taquitos - Makes 7


Ingredients


4 Little Potatoes - Peeled and Chopped

7 Corn Tortillas - Why not try our homemade tortillas

3 Cloves Garlic - Minced

1 Medium Onion - Diced

1 tsp Onion Powder

¼ tsp Smoked Paprika

1 Cup Frozen Peas

Chilli Flakes (Optional) To taste

1 tsp Fajita Seasoning - You can buy fajita seasoning at the shop or make your own. Here's a recipe from BBC Good Food

1 Medium Carrot - Peeled & Diced

¼ Cup Vegetable Stock

¾ Cup Cheese - Grated

½ tbsp Vegetable Oil

Salt & Pepper to taste


Method


Boil the potatoes for 15-20 minutes or until soft enough to mash


Drain the potatoes and mash them till completely smooth.


Add the cheese to the mash potato, mix to combine and set aside.


Preheat the oven 180C


Heat the oil up in a large frying pan


Add the onions and saute until fragrant, about 2-3 minutes.


Add the garlic, carrots and all the spices to your frying pan. Fry for a few minutes.


Pour in the vegetable stock and leave until the carrots are almost cooked.


Add your peas in and place the lid on your frying pan.


Cook for 2-3 minutes or until the carrots are completely cooked.


Pour you mix into the mash potatoes and mix together. If you want a smoother mix you can mash your vegetable mix as well as the potatoes.


Spread a little of your mix into each of the tortillas and roll them up.


Place them on a tray with the seam side down.


Bake for 17-20 minutes or until the tortillas are brown and crispy.


Serve
